Chicken Sausage with Broccolini and Pasta

Italian Chicken Sausage with onions and garlic, simmered with chicken broth, broccolini and small pasta topped with lemon zest and feta.

Ingredients

  • 1 tbsp. Olive Oil
  • 6-8 oz. Cooked Chicken Sausage, cut into 1/4-inch slices
  • 1/2 cup Chopped Onion (about 1/4 of one large onion)
  • 1 cup Dried Small Pasta, like Orzo
  • 3 Cloves Garlic, minced
  • 2.5 cups Low-Sodium Chicken Broth
  • 1/4 tsp. Kosher Salt
  • 1/4 tsp. Red Pepper Flakes, or 1/2 tsp. Black Pepper
  • 1 lb. Broccolini, or 3 cups Broccoli Florets
  • 1/4 cup Crumbled Feta
  • Zest of 1 Lemon

In a large skillet, over medium-high heat, drizzle about 1 tablespoon of olive oil and add the sliced sausage and onions. Stir occasionally and cook until the sausage is browned and the onions are soft.

Then add the minced garlic and stir to combine. Sauté for about 30 seconds more and add the uncooked pasta to the mix. Stir to fully mix the pasta into the sausage and onions.

Now add the 2.5 cups of low-sodium chicken broth. Add 1/4 teaspoon of Kosher salt and 1/4 teaspoon of red pepper flakes. Stir to combine and bring to a boil. Once boiling, reduce heat to a simmer and add the broccolini.

Cover and let the broccolini steam and the rest simmer for about 8 minutes.

Now uncover, and let simmer uncovered to reduce the broth, creating a sauce.

The pasta will finish cooking during this uncovered simmer. Let this simmer uncovered until the broth is mostly absorbed and reduced. About 4-5 minutes more. Stir occasionally.

To finish the Chicken Sausage with Broccolini and Pasta, crumble in about 1/4 cup of feta and grate the zest of one lemon over the top, stir to combine and serve.
