Goat Cheese and Mushroom Pizza with Grapes

A cheeseboard-inspired pizza with tangy, creamy goat cheese; herby sautéd mushrooms; crunchy walnuts; and lightly roasted red grapes.

Ingredients

  • 8-oz. Package Mushrooms, sliced
  • Olive Oil
  • Rosemary or Thyme Sprigs
  • Kosher Salt and Black Pepper
  • 1 Prepared Pizza Dough
  • 8-oz. Goat Cheese
  • Red Grapes
  • Walnuts
  • Fresh Basil Leaves, for garnish

Preheat the oven to 425 degrees F, with a pizza stone or steel.

Sauté the mushrooms and herb sprigs over medium-high heat with about 1/2 cup water and a sprinkling of kosher salt until all the water is cooked off and the skillet is dry. Then add a drizzle of olive oil and sauté the mushrooms in olive oil until they develop some nice browning. Sprinkle with black pepper. Then cut the heat and move the pan off the burner. Discard the herb sprig stems.

Roll, stretch pr spin your pizza dough out onto a lightly floured pizza peel.

Start by breaking up the log of goat cheese and scattering the pieces evenly over the stretched dough.

Then evenly distribute the cooked mushrooms over the cheese.

Evenly dot the top with the red grapes. Follow with scattering walnut pieces over the top. We are ready for the oven!

Bake the pizza for about 7 minutes, or until the dough is set. Then pull out the pizza and brush the crust with olive oil. Slide the pizza back in to finish baking for another 7 minutes, or until the crust is golden.

Let the pizza cool for a few minutes on a wire rack before topping with fresh basil leaves and slicing.
