The Spanish Cheeseboard Pizza is loaded with mozzarella, Spanish Chorizo, Manchego Cheese, with dollops of fig jam and crushed tomatoes.

Ingredients

  • 1 Prepared Pizza Dough
  • 1.5 cups Grated Mozzarella Cheese
  • Canned Crushed Tomatoes
  • Spanish Chorizo Slices
  • Fig Jam
  • 1 Shallot, sliced thin
  • Minced Fresh Parsley

Instructions

Preheat your oven to 425 degrees F with a pizza stone or steel, or follow the package directions on your prepared pizza dough.

Roll, spin, or stretch the dough out on a lightly floured pizza peel.

Top the dough with about 3/4 of the mozzarella cheese. Follow the mozz with dollops of the crushed tomatoes. You will only use a little of the tomatoes, so save the rest in an airtight container in the fridge for another use.

Next add a layer of sliced Spanish chorizo. Then, sprinkle the remaining 1/4 of mozzarella cheese. Top the cheese with dollops of fig jam. Lastly, before the oven, add the shallot slices.

Bake the pizza for 15-20 minutes, until the crust is puffed and golden and the cheese is melted and bubbly. When the pizza comes out, sprinkle the top with the shaved Manchego and minced parsley.

Slice and serve.
