I was missing one of my favorite Japanese appetizers and wanted to give it a try at home. Agedashi Tofu is a fried tofu appetizer popular at many sushi restaurants, and if you've never tried it you're missing out! The good news is it's super simple to prepare at home with great results. Cubes of tofu are fried for crispy, crunchy exteriors; the cubes are served in a shallow bowl of savory dashi, slightly sweetened with mirin. The fried tofu cubes are topped with a sprinkling of togarashi, sliced scallions, crispy seaweed and bonito flakes. Such great flavors and textures in this dish! It's so light and fresh!

Today I have another great Mardi Gras recipe: Mardi Gras Creole Kabobs. These kabobs are great for a group, or for two with leftovers. You can most definitely fire up the grill, or you can do what I did and fire up the grill pan. I love kabobs, especially for a party; I plan to keep this recipe handy for summer, they're a great idea for a cookout. We have shrimp, sausage, onions, tomatoes and sweet red peppers all marinated in Creole spices, then grilled to perfection.

Today's recipe is as simple as The Easiest Pasta with Butter and Cheese, but Salerno-Style Pasta ups the ante with breadcrumbs, parsley and a fried egg, which tops each serving like a beautiful golden crown. The pasta is made creamy with parmesan and pasta water, flecked with parsley, garlic and red pepper flakes. A generous sprinkling of toasted panko gives a satisfying crunch. Then we have the fried egg; the yolk adds its own savory sauce.

It's Mardi Gras Season! Though Mardi Gras Day is Tuesday, February 21, the parades started on January 6. Krewes will continue the parade schedule through February 26 this year. I have not been to New Orleans for Mardi Gras season, but I hear it's best to experience it any day during the season other than Mardi Gras Day. We are bringing a little bit of New Orleans and Mardi Gras season home today with a classic New Orleans recipe – the Muffaletta Sandwich. I do love a Po-Boy, but I have to admit the Muffaletta Sandwich hits all the right notes for me. Laissez les bons temps rouler!

Today I have a fun, dare I say nostalgic, pizza recipe. Puff Pastry Pizza Pockets. Surely you remember the ubiquity of Hot Pockets in the 1990s. The mouth scalding mozzarella cheese and sauce (no matter how long I let that Hot Pocket cool off, it always burned my mouth), wrapped in a doughy pocket, were a favorite lunch or after school snack. Today, we're updating them a little with puff pastry dough. The insides will still scald your mouth, so let them cool off. A lot.

I have a sweet treat today. A citrus cake that is perfect for right now! With fresh grapefruit juice in the cake and glaze, this cake is lightly sweet with just the perfect amount of tartness from the grapefruit. Yogurt also lends a little tang, but it mostly makes this cake super moist. Perfect with a cup of tea, or as a palate cleansing dessert, put this cake to the top of your winter sweets baking list!
