Welcome to Pizza and a Movie on Djalali Cooks. I have some news to share; I am taking on a larger role at Style at a Certain Age. This means that today's Pizza and a Movie will be the last regular post on Djalali Cooks.

Foremost, I want to say thank you so much to all of you for your support and interest. We have created quite a community here – sharing ideas, stories and memories. I am not going far; starting April 30, Kelly's Kitchen on Style at a Certain Age will feature a fresh new recipe every Sunday evening. Today we have part two of using one ingredient for two separate meals. Yesterday we used half of a grated sweet potato for a Sweet Potato and Chorizo Quesadilla. Today we are taking the remaining half of that grated sweet potato and making simple sweet potato hash browns. Then we have a side salad and a cheese omelet. Easy Omelet Dinner For One: a complete and satisfying meal. I am a big fan of reimagining leftovers and this approach of using one ingredient two ways is a great strategy to add to your tool kit if you're cooking for one.

Last week, my husband had to travel for work so I was cooking for one. Admittedly, I am a little rusty at cooking for one. Instead of reimagining the leftovers from a single dish, I came up with an idea to use one ingredient, two ways. The featured ingredient is a sweet potato. For this first recipe, Chorizo and Sweet Potato Quesadilla, we will prep one, one-pound sweet potato. Using half of it for today's recipe and the other half for tomorrow's recipe.

This week we are making the most of our Korean Barbecue Chicken leftovers with Korean Chicken BBQ Pizza. If you make my recipe from Monday for two, chances are you'll have leftovers. This pizza is a great way to reimagine those leftovers – from rice bowl to pizza. Mozzarella cheese is like a chameleon, it can blend with all kinds of flavors to lend it's light richness to whatever you can imagine. Kimchi on a pizza? Yes. It's a wonder kimchi hasn't become a regular pizza topping. Like pickled jalapeños, kimchi brings a sour, spicy flavor – plus, its funky fermented flavor and plenty of crunch! It's amazing!

Today we have a spring sweet that highlights the gorgeous strawberry. The recipe is so simple that you can really use any kind of berry (or fruit) and preserves combination you like. Make it mixed berry, or even go for apricots, when those come into season. I think using the same kind of preserves as the fresh fruit really amplifies the fruit flavor. But you know what? You don't even have to use fresh fruit. You can go for just preserves. A super simple treat to throw together, at a moment's notice, today we have Easy Strawberry Oat Bars.
