Hello, welcome to Djalali Cooks! Today we have a spring sweet that highlights the gorgeous strawberry. The recipe is so simple that you can really use any kind of berry (or fruit) and preserves combination you like. Make it mixed berry, or even go for apricots, when those come into season. I think using the same kind of preserves as the fresh fruit really amplifies the fruit flavor. But you know what? You don’t even have to use fresh fruit. You can go for just preserves. A super simple treat to throw together, at a moment’s notice, today we have Easy Strawberry Oat Bars.
Strawberry Filling and Oat Crumble Crust
Start by preheating the oven to 350 degrees F. Line a 9 x 13-inch baking pan with parchment and set aside.
In a medium bowl, combine the preserves, 2 tablespoons of flour, lemon juice and chopped berries. Mix well to incorporate the flour and lemon juice. Set aside.
In a food processor combine the flour, brown sugar, baking powder, lemon zest, kosher salt and butter. Pulse until the mixture is a sandy consistency. Transfer the flour mixture to a large bowl and stir in the oats.
Assembling the Easy Strawberry Oat Bars
Pour half of the oat and flour mixture into the prepared baking pan. Use a meat pounder or a thick jar or glass to firmly press the mixture evenly into the pan. Top the pressed crust mixture with the berry and preserves mixture. Use a a flat silicone spatula to smooth the berry mixture into an even layer.
Top the strawberry layer with the remaining flour and oat mixture. Spread evenly across the top of the fruit. Lightly press the flour and oat mixture.
Bake the Easy Strawberry Oat Bars for 35-45 minutes, until golden brown.
Let the Easy Strawberry Oat Bars cool in the baking pan set on a wire rack. The bars will firm up as they cool. When completely cool, slide the bars out of the baking pan and cut into squares. You can certainly serve these while they’re still kind of warm, but know that they will be less firm and so will need a fork or spoon. Though…served warm, in a bowl with a scoop of ice cream is a great idea!

Easy Strawberry Oat Bars
Easy Strawberry Oat Bars come together quickly and are totally customizable - use your favorite berries or fruit for a great seasonal sweet.
Ingredients

April 13, 2023 at 10:43 amThese bars are gorgeous and look very easy to make. The grandkids will have them eaten as soon as they come out of the oven. They could be made with almost any fruit, but strawberries are the perfect choice, especially since I buy a big package every time. I go shopping. Aside from tasting great, the bright red color is so appealing, and so pretty. When we were kids my mom made apple crumble when we were lucky, but it happened just enough to keep us hooked, but not often enough to make us happy! These strawberry bars would have been a great choice for our busy mom, but she and dad weren’t partial to strawberries. All five of their children loved them! Funny how that happens.
