Hello! Welcome to Pizza and a Movie. Today’s pizza uses up the leftover duxelles we had on our Asparagus and Duxelles Tartines. We are adding to the duxelles flavor profile with Jambon Sec (or Prosciutto), black truffle zest, burrata and lemon zest. This pizza is rich and earthy, piquant with the truffle zest and bright with the lemon zest. A gorgeous-looking pizza that is just as gorgeously flavored. Let’s get right to it – it’s Duxelles Prosciutto Pizza with Burrata!
Start by preheating the oven to 425 degrees F with a pizza stone or steel. The temperature you preheat is really going to depend on the prepared pizza dough you are using. Since every dough (and oven!) is different, be sure to go by the directions on your package or recipe for the best results.

Building the Duxelles Prosciutto Pizza with Truffle Burrata
Roll, spin, stretch or unfold your dough on a lightly floured pizza peel. Brush olive oil over the surface of the dough. When the duxelles is cold from the fridge, it’s easy to crumble with your fingers. Evenly scatter the duxelles crumbles over the pizza.
Top the duxelles with grated low moisture mozzarella and that’s all we are doing going into the oven. The rest of the toppings will go on post-bake. Bake the pizza for 15-20 minutes.
Post-Bake Toppings
When the crust is puffed and golden and the cheese is melted, bubbly and browning in spots, pull the pizza from the oven and let it sit on a wire rack while we add the rest of the toppings. This will prevent the bottom from getting soft or soggy.
Sprinkle the truffle zest over the pizza. And sprinkle on some truffle salt (this is optional). Then tear or slice the jambon sec or prosciutto slices into skinny strips. I like to put the prosciutto slices in the freezer for about 10 minutes because it’s a lot easier to slice the thin slices into strips when it’s very cold. Arrange the prosciutto slices evenly around the pizza.
Take one ball of the truffle burrata (plain Burrata works too!) and gently dry its surface, then tear the burrata into five or six pieces (do this over the pizza to catch any cream drips). Space the burrata chunks evenly on the pizza.
Then, zest some lemon over the pizza and sprinkle with minced parsley. That’s it!

Try to slice the pie so that each piece has a little burrata and then serve!
This pizza has bold and earthy flavors. It’s mellowed by the creamy burrata and the lemon zest brightens it up. It’s not too heavy on truffle flavor, letting the flavor of the duxelles come through. A really nice mix of earthy mushroom flavor, punctuated with the salty cured flavor of the prosciutto. This is a dreamy combination!

Glass Onion: A Knives Out Mystery is the second installment of the Knives Out mystery series, starring Daniel Craig as the famed detective Benoit Blanc. For his latest case, Blanc travels to Greece and becomes part of an eccentric tech billionaire’s murder mystery game. With an ensemble cast, this Glass Onion has twists and turns, witty comedic moments and is a truly clever mystery.
This movie is fun to watch and Daniel Craig is really great as the Southern detective, Benoit Blanc. Glass Onion: A Knives Out Mystery is available to watch on Netflix with a subscription.

Ingredients

- 3-4 Slices Jambon Sec or Prosciutto, cut into thin strips
- 1 Ball Truffle Burrata (or plain Burrata), torn into 5-6 pieces
- Lemon Zest
- Minced Parsley

January 6, 2023 at 10:41 amIf this isn’t the best pizza and a movie night ever, I don’t know what is. Spinach and Duxelles is something to rejoice about. Yeah, the holidays are over, but ths pizza will bring joy whenever and wherever it’s made. I must admit that when I first read it, I thought it was fascinating that there was an ingredient called a glass onion. It sounded wonderfully exotic. After the synapses started firing I realized that was our movie! Now I’m bereft at the lack of glass onions. But not for long. I have got to watch ths one, and play catch up with the others. This is a killer combination, and I can’t wait to get started.

Like the idea of this pizza and I did happen to be given a variety of truffle ingredients for Christmas so will improvise a bit with this one. We have watched a couple of the Glass Onion movies, although we enjoyed them, considering the actors I thought the acting was poor, but that may be how it was directed.

I do agree that the cast left something to be desired. Perhaps the cast from the first movie were stronger characters…?
