Today we are making a classic, The Best Chicken Parmesan Sandwich. What makes it the best? Well, in my opinion it's the addition of a roasted pepper relish. I have to thank @mattymatheson for that addition. I already had this sandwich on my list for this week, so the addition of the roasted pepper relish was a no-brainer.

Today I have a recipe for a great side dish or vegetarian main. These Jeweled Rice Stuffed Onions are so pretty on the table, they're perfect for a holiday get together. You can do all the heavy lifting a day ahead and they will keep beautifully if you're taking them to a potluck. The gorgeous flavor and color of saffron rice is the star of this show, but the textures and flavors of the dried fruit, nuts and soft onions are really satisfying. And did I mention this dish is super pretty?

You might still be working your way through leftovers, but in case you're ready to move on from Thanksgiving flavors, I have a tomato-based soup with meatballs and pasta. It's hearty and comforting. We're taking a diversion from Pizza and a Movie today to talk turkey leftovers. Alex and I particularly love sandwiches. Today I have an excellent soup for any wintry day. This soup could also be a great starter on your Thanksgiving menu. You can use your favorite mushrooms for this soup, or use a mix of different mushrooms. I went the mixed mushroom route and I love the variety of textures. I also went with a mix of rice: wild rice, red rice and brown rice. The rice mix gives another layer of texture and chew. Overall, a hearty soup with great flavor and texture! Over the last few days, I have posted a few recipes for dishes I enjoyed in Paris. Dishes that are pretty easy to replicate at home. Today's, Oeufs en Meurrette, is from the Burgundy region of France and it means, simply Eggs in Red Wine. Meurette is a red wine and beef stock-based sauce. This dish incorporates mushrooms, pearl onions, and bacon. It takes a little time to simmer and reduce the sauce, but it's all very simple.

After sharing a recap of my Paris Trip earlier this week, I am continuing my unofficial French theme with a Croque-Madame Pizza. Sandwiches naturally lend themselves to be reimagined as a pizza. So to recreate a sandwich I enjoyed at Flottes on Rue Cambon in Paris, today we have béchamel sauce with ham and gruyere cheese baked to golden and topped with a few fried eggs.
