Spinach Ricotta Pizza and Get Back

Hello and welcome to Pizza and a Movie! I hope you had a wonderful Thanksgiving. This pizza is my take on my current favorite frozen pizza; Newman’s Own White Pizza. It has spinach, ricotta and mozzarella on a white sauce. Instead of making a white sauce though, I am topping it with feta. Super simple with fresh flavors, Spinach Ricotta Pizza is a refreshing break if you’ve had your fill of Thanksgiving food and leftovers. We have been super excited to see the new Beatles docuseries by Peter Jackson, Get Back, which premiered on Disney+ on Thanksgiving, and it was everything I had hoped it would be! So let’s do it!

I had some colorful grape and cherry tomatoes so I added those on top. The spinach and ricotta mixture is actually leftover from the Ricotta and Spinach Stuffed Turkey Breast we made a couple weeks ago. I work ahead on the pizza recipes, so I had the ricotta and spinach mix in the fridge for about one week before using it for this pizza, and it held up really well. So if you made that stuffed turkey breast and you have leftover spinach and ricotta mix, this is a perfect use for it.

Spinach and Ricotta Mix

If you aren’t using leftover spinach and ricotta mix, the mix is simple: Combine 1 cup of ricotta; defrosted, drained and squeezed, chopped spinach in a medium bowl. To the spinach and ricotta, add 1/2 cup grated parmesan, 1 minced shallot, and one teaspoon each: garlic powder, dried oregano, dried thyme and dried basil. Mix well to combine.

Pizza Assembly

I am doing this pizza on the pizza steel, so I have the oven preheating with the steel at 450 degrees. In addition to the ricotta spinach mixture, I have grape and cherry tomatoes that I sliced into quarters, real Greek feta, and crushed red pepper. Roll or stretch your pizza dough out to about a 12-inch circle. Be sure to use flour under the dough to prevent the pizza from sticking to the peel.

To further prevent the dough from sticking to the peel, instead of spreading the ricotta mixture on the dough, I am just going to evenly distribute dollops of the ricotta and spinach.

Top the ricotta and spinach with a generous amount of crumbled feta. I sprinkled crushed red pepper over the top, but this is optional. Then top with the quartered or halved cherry tomatoes.

Shimmy the peel and slide the pizza onto the pizza steel. Bake for about 10-15 minutes, until the cheese is melted and the crust is golden.

This Spinach Ricotta pizza is super simple; with gorgeous cheesy textures, thanks to the ricotta and the salty, briny pops of feta. The tomatoes are there to add a little fresh sweetness, but they’re optional. It’s a really great pizza with or without the tomatoes.

Movie Night: Get Back

We have our Spinach Ricotta Pizza ready, so let’s start the show! I have been patiently waiting for Get Back to come out since Peter Jackson released the teaser for it last year. This docuseries is remastered, original footage from the filming of the documentary Let It Be. Peter Jackson and his team re-tell the story of the Beatles’ last album and the final concert, on the rooftop of the Apple recording studios.

For any Beatles fan, this is absolutely a must-see film. An intimate portrait of the band writing and recording Let It Be; collaboration, arguments, humor – the Beatles as a band, and the Beatles as individuals. Get Back is available to stream with a subscription to Disney+.

This Spinach Ricotta pizza is super simple; with gorgeous cheesy textures, thanks to the ricotta and the salty, briny pops of feta.

Ingredients

  • Spinach Ricotta Mixture
  • 1 cup Ricotta
  • 1 12-oz. bag of Frozen Chopped Spinach, thawed, drained and squeezed of excess moisture
  • 1/2 cup Grated Parmesan
  • 1 Shallot, minced
  • 1 tsp. Garlic Powder
  • 1 tsp. Dried Oregano
  • 1 tsp. Dried Thyme
  • 1 tsp. Dried Basil
  • Spinach Ricotta Pizza
  • 1 Prepared Pizza Dough
  • 1-1.5 cups Spinach Ricotta Mixture
  • 5 oz. Real Greek Feta
  • Crushed Red Pepper, optional, to taste
  • 10 (or so) Grape or Cherry Tomatoes, halved or quartered

Instructions

    What a great way to use up the spinach leftover from making the stuffed turkey breast yesterday. That was absolutely delicious, moist and something to be thankful for. Why does spinach either come in a ridiculously small clamshell package, or a bag big enough for the big garage cleanup? Okay, that may be an exaggeration, but spinach and kale are almost always packed in huge bags. I hate fighting with those fiddly clamshells, but I didn’t want a huge bag in the fridge either. The holidays re barreling down upon us at warp speed. All we have left to buy are Roblox gift cards for the grandsons, and an Apple gift card for someone older who has everything to do with computters and electronics. I watched the entire parade yesterday, and I always wait until I have seen Santa to turn it off. It’s the high point of the parade for me. Last night we watched part of the Beatles documentary that is streaming on Apple. We’re trying to squeeze it in between finishing What We Do In The Shadows, and the holiday specials.

    This has been an absolutely crazy week, so I almost didn’t get around to Stump The Chef. This is going to be an easy one because I really couldn’t decide what the category would be. Christmas was too obvious, but it won’t prevent me doing that next month! This week’s selection is astrology. There were only two movies that I could find. The first is an oldie from the late eighties I think. It’s called January Man and stars Kevin Kline. It’s quirky, interesting and very eighties. I liked it and found it an interesting idea, that could have been better, but it had Kevin Kline, so it was worth a try. My husband watched it a lot, so it holds a spot on the list. Next is Zodiac starring Jake Gyllenhaal as a cartoonist who becomes obsessed with finding out who the Zodiac Killer is. This movie is rated well and the acting was very good. It starred everyone who was anyone in the eighties. Only one pizza this week because there’s a bonus game. Did you think I’d let you off that easily????

Your challenge is to come up with eight pizzas, all using a base of latkes. This one is for my friends Avi and Zahavah. Happy Thanksgivukkah ladies.       Hi Mari, Quite a tall order, this week’s challenge! We really like the film, Zodiac. Jake Gyllenhaal is really great in it. I think a sourdough focaccia pizza would be a good pizza for a movie that takes place in SF; with pesto, artichoke hearts and tomatoes.
      When you say with “latkes as the base” I am not sure if you mean instead of dough. Fried potatoes are amazing on pizza, so I am going to go with latkes as a the base ‘topping’ if that’s ok. But one certainly could do away with the dough and make the latke the base.
      1. A simple pie with latkes and shredded mozzarella, finished with crème fraîche and chives.
      2. Goat cheese with latkes, finished with chopped parsley and lemon zest.
      3. Cream sauce with latkes and hot smoked salmon, finished with fresh dill and capers.
      4. Sautéd kale topped apple slices and latkes, finished with sour cream.
      5. Asiago cheese with latkes, topped with a fried egg and chives
      6. Shredded provolone with pastrami, topped with latkes and finished with drizzled sour cream.
      7. Mozzarella cheese with latkes, finished with a drizzle of crème fraîche and hot honey.
      8. Latkes with shredded cheddar cheese, scallions, and apple sauce.

        I did think instead of dough would be interesting, but on the dough really works well with everything you came up with, so I’d say you passed with flying colors, as always. Some of those (all of them) sound really good and will definitely make their way into the rotation. I honestly don’t know which one I’d try first. We did finally see Protégé, and thoroughly enjoyed it. Even though we only got 20 minutes into Get Back, it was amazing to see some of the people whose names I had heard very often, but who remained faceless, until now. I always love seeing George Martin, who seemed like a very sweet and very patient man. Did he ever not wear a suit and tie? It surprised me how much better looking John and George were on video, because they didn’t really photograph that well. Yoko also looked better on video. Her face was softer and gentler. Ringo and Paul always looked like themselves whatever the medium was. They really have an enduring appeal. It’s crazy that my kids all turned out to be Beatles fans. After all these years, I still like Ringo the best, although I think that arguably, Paul is the most talented of the four. For fun, look up the Reo Brothers on YouTube. They do Beatles covers and at times, you would swear they were the real thing. They’re amazing.
