Hello and welcome to Pizza and a Movie! Remember a back in June we did that Sun Dried Tomato Pesto Pizza? Well I have been thinking about that sun dried tomato pesto ever since. So I am bringing it back for today’s pizza. We have sun dried tomato pesto and fresh heirloom cherry tomatoes for a tomato-two-ways combo that is just about perfect. Add some burrata and fresh basil, and we have something like a Margherita but with more concentrated, tangy tomato flavor and a richer, creamier finish. Let’s get right to it!
Sund Dried Tomato Pesto
The sun dried tomato pesto is simple to make: process sun dried tomatoes along with the oil in their jars with parmesan cheese and pine nuts until a paste forms. Drizzle in olive oil with the processor running until you get a smooth, spreadable consistency. The recipe is below, in the recipe card. Preheat the oven to 450 degrees F.
Assembling the Super Tomato Pizza
We have quartered or halved cherry tomatoes, and about 1.5 cups of grated mozzarella. Roll, spin, or stretch your dough out to about a 12-inch round. Use a flat bottomed spoon or a silicone spatula to carefully spread a layer of the sun dried tomato pesto on the dough, leaving a 1/2-inch border for the crust. I like to use my rice paddle to spread the pesto because it’s wide and flat.
Cover the sun dried tomato pesto with grated mozzarella and top with the halved or quartered cherry tomatoes.
We are ready for the oven! Bake the pizza for 10-15 minutes, until the crust is puffed and golden and the cheese is melted and bubbly.
You can see the sun dried tomato pesto has given up a bit of its oil on the surface of the pizza. You can take a few paper towels and gently blot the top of the pizza to get rid of the excess oil.
Then, take your burrata and break it up into several pieces, letting the cream inside drip onto the pizza. Distribute the burrata pieces evenly around the top of the pizza.
Top the pizza with as many fresh basil leaves as you like.

Well, Jerry Selbee (played by Bryan Cranston) is facing retirement; as he is trying to adjust to retired life, he discovers a loophole in the Massachusetts State Lottery. He starts winning. When his wife, Marge (played by Annette Bening) gets involved, she gives Jerry the idea to involve the town. Not only to increase their odds by playing more tickets, but to help reinvigorate their decaying town.
This movie is sweet and heartfelt; with regular folks to root for – no special effects needed. With fewer and fewer plain old feel good movies out there, Jerry & Marge Go Large is a welcome breath of positivity and goodwill. Ingredients
- Sun Dried Tomato Pesto
- 2 7-to-8-oz. Jars of Julienned Sun Dried Tomatoes in Oil
- 1/4 cup Ground Parmesan Cheese
- 1/4 cup Pine Nuts
- Olive Oil
- Super Tomato Pizza
- 1 Prepared Pizza Dough
- Sun Dried Tomato Pesto
- 1.5 cups Grated Mozzarella Cheese
- ~1-1.5 cups Halved or Quartered Cherry Tomatoes
- 1 Ball of Burrata
- Fresh Basil Leaves
Instructions
Sun Dried Tomato Pesto
Pour the entire jar contents of the sun dried tomatoes into the bowl of a food processor. To that, add 1/4 cup of pine nuts and 1/4 cup of ground Parmesan cheese.
Process the sun dried tomatoes, cheese and pine nuts until the mixture resembles a thick paste. Then drizzle in olive oil with the processor running until a smoother, looser consistency is reached. Transfer the sun dried tomato pesto to a jar or airtight container.
Super Tomato Pizza
Preheat the oven to 450 degrees F.
