Hello! Welcome to Pizza and a Movie on Djalali Cooks. This week I have a classic Supreme Pizza. With pepperoni, green peppers, mushrooms, onions and olives. Two things I did differently were to omit sausage and instead of tomato sauce, I have roasted red pepper puree. But otherwise all the classic flavors and textures are here – and sometimes a classic Supreme Pizza is just the ticket. Let’s get right to it!
This Supreme combination is certainly nostalgic. For me, it’s the King Arthur Supreme from Round Table Pizza. For you, it might be called something else, but it’s likely this same combination of veggies and meat. Like I mentioned at the top, I swapped the tomato sauce for red pepper puree and I left out the sausage. You can certainly use tomato sauce and sausage if you like. Or swap out whatever you see fit in order to recreate the Supreme Combo you remember.
Build the Supreme Pizza
Preheat the oven with a pizza steel or stone to 425 degrees F. I like to sauté my mushrooms before they go on the pizza because it makes the end result a lot less wet. But you can throw raw sliced mushrooms on there if you prefer. Otherwise I have a sliced green bell pepper and about 1/4 of a white onion, sliced thin; black olives, pepperoni and mozzarella.
Roll, spin or stretch your prepared pizza dough on on a lightly floured pizza peel. I am using a piece of parchment because this dough is very sticky and I want to use less flour. You can do this to make the dismount of the pizza from the peel to the stone a lot less sketchy. Just slide the whole piece of parchment with the pizza onto the stone or steel and bake the pizza right on the parchment. You can also make this a pan pizza if you like.
Spread a layer of the red pepper puree or tomato sauce on the dough, leaving a 1/2-inch border for the crust. Top the sauce with grated mozzarella cheese. Then an even layer of pepperoni slices. Followed by the mushrooms.
Spread the green peppers and onions over the mushrooms. Then sprinkle on the black olives.
Top with a little extra cheese and we are ready for the oven! Bake the pizza for 15-20 minutes, until the crust is puffed and golden and the cheese is melted.
Set out the powdered Parm and red pepper flakes! A classic Supreme Pizza Combo is an oldie, but a goodie. Sometimes I crave the simple pizza flavors and combos I remember from being a kid. Slice the pizza how you like it and let’s get to the movie.
Movie Night: Pretty Baby
This week’s movie is the new two-part documentary about Brooke Shields, Pretty Baby. An interesting and thought provoking documentary, Pretty Baby tells Brooke Shields’ story through her own words. Behind the scenes footage from her early movies is interspersed through her story, as well as television interviews and footage. Given the fate of so many child stars, it really is amazing that she made it though the fame to be the woman she is now.
Pretty Baby is streaming on Hulu and is available to rent on Apple TV, Google Play, Amazon Prime, Vudu and YouTube.
Thank you all for joining me today for Pizza and a Movie! The red pepper puree I used for today’s Supreme Pizza was leftover from the pizza we did last week, Red Pepper and Artichoke Pizza. Two great uses for red pepper puree, give them a try! Have a great weekend, take care and be well, xo Kelly

April 7, 2023 at 9:58 amAnother great Friday pairing. My kids have been Supreme pizza fans forever, and I have too. It will be fun to actually make this one after so many years of just buying them. I never think the ones at the store have enough toppings, so yours is really up my alley. The Brooke Shields documentary has piqued my interest. She has turned out amazingly well, considering her less than ideal parents and childhood. She must be one strong woman, and I admire her talent and tenacity. I am still hoping to see John Wick 4, although it will be bittersweet for me without the amazing Lance Reddick. We will probably wait for Pay Per View, since actually going to the movies is not my favorite thing. Here we are coasting into Easter after a long, cold winter, and it’s about time. When I was growing up, my mother said it always rained on Good Friday. While I don’t think that’s necessarily true, there have been a lot of them over the years, and today looks like it’s going to be another one. Happy Friday Kelly, and Happy Almost Easter. I miss making Easter baskets because even my grandchildren are too old for them, and most of the adults don’t like candy that much. There are always deviled eggs though! Evevrybody likes those. 🐣😀🐰🥚

April 7, 2023 at 11:21 amHi Mari, I am sure this pizza will be a hit. I know what you mean about Easter baskets, I miss them too! You should watch the Brooke Shields doc, it is very thought provoking. Happy Easter, and just so you know (because I forgot to mention it in today’s email) we will be skipping Sunday Supper this week, in honor of the holiday. See you Monday! xo Kelly

April 10, 2023 at 8:42 pmHi Kelly, I trust you had a happy and holy Easter, I admit that we didn’t go to church but I did debate with our youngest grandson the importance of Easter and that hot cross buns should keep their name and not be called Easter buns, and that the cross has great significance. I don’t think he had any idea of how important religion is in my life or any idea of what Easter is really all about. Anyway back to the pizza, it looks yum! Must be time for another one in our household. And I will check out the Brooke Shields movie.
Happy cooking 🧑🍳
Sally 🤗

April 11, 2023 at 7:40 amHello Sally! I am glad you enjoyed the Easter holiday with your family. Do try the pizza, I am not sure about Australia, but in the America, this is one of the most-loved American style pizza combinations. Let me know how you like it, and the Brooke Shields movie. Have a great day! xo Kelly
