My Sunday Supper series features one pan, one pot, easy recipes to end your weekend and start your week. Sometimes Sunday Supper meals are quick, one-and-done recipes, and sometimes I feature a recipe that is more of a Sunday Cooking project; a recipe that is more involved in terms of time and effort, but is just as easy. Cioppino, San Francisco Fisherman’s Stew
Today we have a beloved San Francisco dish. Invented in the late 1800’s by the Italian fishermen of San Francisco’s North Beach. Cioppino is a healthy, hearty tomato-based seafood stew that contained the leftover seafood from the day’s catch. So you can get creative with your favorite seafood and shellfish. I have a seafood blend from Trader Joe’s with scallops, shrimp and calamari. Also, I have some wild caught Alaska cod and Bar Harbor canned clams.

Herby Chicken and Rice Salad
Last week we had a delicious Indian-inspired chicken and rice dish, and this week we have another chicken and rice recipe. Today, Herby Chicken and Rice Salad – a perfect summertime chicken and rice dish. We are using a store-bought rotisserie chicken, making this an easy, quick salad to throw together for a hot day’s dinner. Let’s get right to it!

The Greatest Meatball Sub
I am so excited for today’s recipe because this is literally The Greatest Meatball Sub I have ever had. Super flavorful meatballs, braised in a simple tomato sauce; nestled in cheesy, garlicky, toasted sub rolls. A savory olive relish tops the saucy meatballs for an explosion of rich, deep flavor. Hands down, this Meatball Sub is worth every minute and effort the recipe requires. These Meatball Subs do have a number of steps, but do not let that discourage you– each component is simple. Burma Superstar Coconut Chicken Curry
Alex and I independently loved the restaurant Burma Superstar, in San Francisco. We never went there together while we lived in California, but since moving to Athens, we have talked about how much we wish we had gone there before we left California. Eh, well… Fortunately, they have a cookbook! So today, we are making an adaptation of Burma Superstar Coconut Chicken Curry.

Chicken Noodle Soup
We are back in Athens and it’s nice to be home, but I will say that we are already missing Tybee. To soften the re-entry to the regular day-to-day, I think some Chicken Noodle Soup is in order. I asked Alex to smoke a chicken for this recipe and I am glad I did, because while I would have been happy with a store-bought rotisserie chicken, the smoked chicken really added a ton of amazing flavor. The other incredible flavor boost in this soup is dill. A lot of dill.

December 26, 2022 at 10:27 amI love these roundups because they remind us that there are wonderful things for supper that aren’t leftovers. The meatball subs are a great favorite here, and the chicken soup is to die for. I’m going to make a big pot and that takes care of lunch for anyone who is extra hungry, or who likes a more substantial lunch. That will be my go to lunch/supper on days when I miss breakfast and forget to eat until two in the afternoon. There are a lot of those this time of year! Thanks for a wonderful year of great ideas and delicious food, and for your positive attitude in a negative world. We need that! Happy Monday to you, Alex, the pups, Terry and Gran. 😊
