Caramelized Onion and Ham Pizza and Everything Everywhere All At Once

Hello and welcome to Pizza and a Movie! Today I have another great combination that is super simple with rich, unmistakable flavors. Sweet caramelized onions and savory ham. To go along with this classic combination, we have gruyere cheese instead of mozzarella. These three ingredients, delicious on their own, come together to create layers of sweet, savory, buttery and nutty flavors – so familiar yet so complex. Caramelized Onions

First, preheat the oven with a pizza stone or steel to 450 degrees F. Start the prep with the caramelized onions. For the best results, no cheating. These take some time. Use yellow onions for the sweetest flavor. I went with two medium onions and had some caramelized onions leftover to add to another dish. Get a large pan and drizzle in 2 tablespoons of olive oil. Over low heat, add the sliced onions to the pan.

Let these go for about 30 minutes, stirring occasionally. Add more oil as needed to keep the onions from sticking. They shouldn’t stick at all if the heat is low enough, so if they’re sticking, add a little more oil and turn down the heat.

After 30 minutes, sprinkle with kosher salt and deglaze the pan with about 1/4 cup of dry white wine. Let the wine cook off and get completely absorbed by the onions. Once the skillet is dry cut the heat and transfer the onions to a separate dish to cool.

I have a single ham steak that I cut into 1/2-inch batons. While the ham is warming though and browning, grate the gruyere cheese.

We will brown the ham in the same pan we cooked onions in. Over medium heat add a drizzle of olive oil to the pan and add the ham. Let the ham warm through and develop a little bit of browning. Stir to evenly brown the ham pieces and remove from heat and let the ham cool before topping the pizza.

Roll, spin or stretch your prepared pizza dough to about 12-inches round. Start with about 2/3 of the grated gruyere, giving even coverage and leaving about 1/2-inch around the dough for the crust. Then top with the cooled ham.

Top with the caramelized onions and add the rest of the gruyere cheese on top.

We are ready for the oven! Bake the pizza for 10-15 minutes, until the cheese is melted and bubbly and the crust is puffed and golden.

Movie Night: Everything Everywhere All At Once

This movie is so weird! But don’t let that stop you from renting and watching it. Everything Everywhere All At Once is a heartfelt and sweet story about family, mixed with science fiction and kung fu, in a multiverse. Michelle Yeoh plays Evelyn Wang, a hard working woman whose laundromat comes under the scrutiny of the IRS in an audit. During the audit meeting, the multiverse collapses on Evelyn.

This movie has some very funny and very wacky moments. Jamie Lee Curtis is great as the IRS Auditor. A world where one is confronted with the other versions of themselves across the multiverse might be just as wacky and weird as the world imagined in Everything Everywhere All At Once.     Caramelized onion and ham sounds like an amazing combination. My favorite crackers currently are oat flatbreads with caramelized onion, and ham is practically one of the major food groups, although it is possible sometimes to have eaten it too often. Usually right after a holiday when there are a lot of leftovers, especially the meat. Leftovers or not, this pizza sounds amazing. I am really thrilled with this week’s movie choice. Yet another one I hadn’t heard of, that I really want to see. Jamie Lee Curtis and Michelle Yeoh are both amazing actresses. Jamie Lee is especially good in screwball comedies and she does wacky very well. I have seen Michelle kicking ass in a lot of Jackie Chan-like movies, and some with Jackie Chan. She is a very good actress, and like Jamie Lee has often been typecast. These ladies both have so much more to offer, and I am a fan. I’m so glad you chose this movie for this week, and I will enjoy it very much. Thank you for a wonderful, eclectic pick.
    We have been going back and forth all summer being pleased with the rain nourishing our gardens and lawns, and lamenting the form it often takes. We had another huge thunderstorm last night. As usual it started at supper time, and it was loud. The electricity flickered off and on several times, but there were no power lines down, and fortunately no outages. I don’t mind the storms per se, and I don’t particularly fear them, but I hate the loud booms and crashing noises. It brought me to the subject of this week’s Stump The Chef. In the past ten years or so, there has been a veritable flood of execrable movies all predicting doom and mayhem, and global warming. Whether or not someone believes in global warming, climate change or whatever the term du jour is, the movies have all been uniformly execrable. Badly written, so of course the acting wasn’t good either. All post apocalyptic gloom and doom, and chicken little nonsense. If the sky ever is falling, it will be politicians starting it, not angry trees and malevolent shrubs. Spoiler alert. It usually is politicians! The weather had me thinking that I’ve never really seen a good natural or man made disaster movie. I’m likely just forgetting, since there must have been some. Can you name any that were good, and that didn’t make your eyes roll back so far that they were stuck in that position until the movie ended? It can be natural disasters, bad guys trying to blow things up, or government agencies running amok: the choices are endless, but good results are not! . Honorable chef, please name three movies that were actually good, and what kind of pizza you would serve with them. Or would you serve something else? As always, love to my Djalalis and Terry. My youngest son and his family were in Scotland for two weeks, and my daughter and her family are going on a cruise to the Bahamas. When I heard that, I jokingly mused aloud about the Bermuda Triangle. My son said “Not Bahama Triangle Mom. Bermuda!” So then I wondered if there were a Bahamian Trapezoid or Decahedron. I never learn from my mistakes and quit while I’m ahead. I was treated to a withering stare as he attempted not to laugh out loud. For the record, he did not. But his lips twitched. 🤣🤣

      Hi Mari, I have seen a few good disaster movies. My top pick is The Perfect Storm. That is a great movie and George Clooney is, of course, fantastic. Since that’s about New England fishermen, I think the pizza should be cream-based with lobster, finished with melted butter drizzle and chopped parsley. Another good disaster film I enjoyed quite a bit was The Impossible; about a tourist family on vacation in Thailand caught in the 2004 Indian Ocean Tsunami. Naomi Watts and Ewan McGregor star, and they are great. The movie is quite hard to watch at times, it’s graphic – but an amazing story nonetheless. I might make them the Thai Basil Chicken Pizza to celebrate their survival. And then just for fun, Twister is totally entertaining and I love Bill Paxton. The group of storm chasers in that movie would really enjoy a Chicago or Detroit style deep dish pizza. And they deserve a big meal, with all their storm chasing!         I had forgotten about Twister, which I also enjoyed very much. Sometimes it’s hard to remember the good with all the not so good movies that surround them. You also nswered a question that I didn’t even remember to ask. Pizza with lobster sounds really good, and I kept meaning to ask and didn’t. You are good!
