Hello and welcome to Pizza and a Movie! Today’s pizza is as colorful as it is flavorful. Bresaola, the air-dried, salted, aged beef from Italy’s Lombardi region adds incredible flavor and aroma to anything it’s with. If you’re a fan of cured meats, Bresaola is such a great option as a changeup from the usual likes of prosciutto, coppa, salami, chorizo, etc. Bresaola has a distinct flavor and a musty aroma, it’s incredible on a pizza! Let’s get right to it.
Preheat the oven (with a pizza stone or steel) to 400-425 degrees F, depending the package directions of your prepared pizza dough. In addition to the Bresaola, we have mozzarella, fresh spinach, feta, pepperoncini peppers and olive tapenade.
Roll, stretch or spin your dough out on a lightly floured pizza peel. Top with mozzarella cheese and then a light layer of spinach. Sprinkle a little feta over the spinach.
Now lay the slices of Bresaola on top. Then dot the top with dollops of olive tapenade. And sprinkle the sliced pepperoncini peppers on top. Add another sprinkling of feta and we are ready for the oven!
Bake the pizza for 15 minutes or so, until the crust is golden and the cheese is melted. The feta won’t really melt, but it might get brown in spots, which is great!
Bresaola and Feta Pizza with Olives
The mellow mozzarella makes a great base for the strong flavors we have going on here. The slightly sweet, beefy flavor of the Bresaola is perfect with the briny flavor of the olives and the feta. The pickled pepperoncini adds a little spiciness. The spinach is there mostly for color, we don’t have enough of it to affect the flavor. Overall, it’s a balanced pizza with beautiful, enticing color.
Movie Night: Bullet Train
We have our Bresaola and Feta Pizza with Olives ready so let’s get to the movie. Bullet Train is an action movie starring Brad Pitt, directed by David Leitch. If you’re a fan of beautifully choreographed fight scenes, this movie is right up your alley. Bullet Train‘s director David Leitch is a former stuntman, fight coordinator and now director. If you’re into this genre, you will recognize his work from other movies such as John Wick, Nobody, Deadpool 2, and the recent Violent Night.
While I am not a big fan of super violent, gory movies, I do enjoy this type of action movie. Fight choreography has hit a level of artistry that is more like watching a complicated dance than it is like a fight. With comedy and wit thrown into the mix, the fights are more and more part of defining the characters and actually part of telling the story. A strategy familiar now, thanks to films by Quentin Tarantino and Guy Ritchie. While I got more out of the stories in films like John Wick and Nobody, Bullet Train was fun to watch. It verged on anime territory, with fantastical graphics, costumes, set design and lighting.
Entertaining overall, Bullet Train is available to watch on Netflix with a subscription, or to rent on Apple TV, Vudu, Redbox and YouTube.

- Handful Fresh Baby Spinach (or other greens, optional)
- Feta Cheese, crumbled
- 3 oz. Bresaola
- Olive Tapenade
- Pepperoncini Peppers
