Hello and welcome to this very special edition of Pizza and a Movie! I have mentioned the company we bought our wood fired oven from a few times before on the blog; and back in January, Mugnaini (moon-ya-ini) reached out to me about doing a collaboration. Of course I was super excited to work with them because we have been big fans of theirs since we went to the Mugnaini showroom for a cooking demonstration years ago. So today, instead of a movie recommendation to share with you, I have our movie! Djalali Cooks with Mugnaini. In addition to this being my first collaboration, it’s also my first video on my YouTube channel. I hope you enjoy the movie!
Djalali Cooks with Mugnaini
You may recognize the pizzas featured in the video; one of them is a pizza version of my Peach Caprese Salad. The other is a new take on a Mexican-style pizza. I use Andrea Mugnaini’s recipe for 3 Hour Pizza Dough, from her book, The Art of Wood Fired Cooking. If you’re interested in wood fired cooking, this cookbook is must-have! It’s chock full of great recipes that are surprisingly simple to prepare.
The Georgia Peach Pizza is simply mozzarella and sliced fresh peaches going into the oven. Coming out of the oven, it gets a drizzle of balsamic glaze and fresh basil leaves.
The Mexican Pizza utilizes leftover smoked pork shoulder, but you can substitute cooked Mexican chorizo. Mozzarella, smoked pulled pork, salsa verde, fresh corn kernels and pepper jack cheese top this pie. When it’s out of the oven, it gets some fresh cilantro.
Thanks for watching – let me know how you like the video! Be sure to subscribe to my YouTube channel to be notified when new videos are posted. Take care and be well, everyone. xo Kelly

This was a great video. Love your three dogs! Seems they enjoyed doing the video as well.
Kelly DjalaliJuly 23, 2021 at 12:33 pm
Hi Paula, the dogs love the pizza more than being in the video! Every time I turned the camera on them they would avoid me, Lol! Thanks so much for watching. Have a wonderful weekend, xo Kelly
DeannaJuly 23, 2021 at 11:48 am
Ok Kelly! You rock at tossing that pizza crust! Great video, so enjoyed your demonstration. The pizzas look mouth watering, as always. Love your pizza oven, backyard, dogs, a glimpse of Alex??……the whole ambience is so soothing. Can’t wait to watch your cooking show on the Food Network or Cooking Channel someday. Dreams do come true. Especially for talented people like you!
Kelly DjalaliJuly 23, 2021 at 12:36 pm
Hi Deanna, Thank you so much! You’re too kind. And yes, that was Alex! I had a harder time getting him to be in the video than the dogs! I have had so many years of practicing tossing pizza, it’s still a lot of fun – especially to do it outside. Thanks so much for watching, more to come! Have a great weekend, xo Kelly

Oh wow, I loved watching that. I defy anyone to flip pizza dough better than you do. You are a rock star pizza queen. There are some great pizza ideas in this video too. I had no idea it was only 90 seconds in a pizza oven. This was so much fun! I hope you do more videos. The patio looked like it could be in a magazine, and it also looked like real people use it, so great job on all fronts. Just amazing. What a way to end the week! Thank you so much.

Kelly, am so happy for you! Saw the video good and early as I rushed off to a very busy, but very lovely, long, long day. So many treats in today’s post, and my two most favorites are 1) the sound of your voice in the video and 2) your pizza-dough-tossing skills. You’re an absolute natural! Thanks again for sharing with us. This ranks as possibly my most favorite post, and I have many favs 🙂 Hugs! ~

Hello Sylvia, Thank you so very much! I am happy you caught the video and that it’s one of your favorites! Tossing pizza dough is pretty fun, though I will admit, it’s a lot more fun when you’re not in the middle of a dinner rush, Lol. Thank you for taking some time from your long day to drop me line, it’s great to hear from you 🙂 I hope you have a restful weekend! xo Kelly

Just now had a chance to watch your great video. I HATE to cook, but I love following you and your delicious recipes. You make everything so relatable, and I swear, one of these days I’m going to actually cook a recipe. You inspire me, and I have learned so much about spices, oils, and just general knowledge of the kitchen and pantry. About that kitchen . . . I’ve already commented on how beautiful your renovated kitchen is, but doing it again. You urge us to be well, and I wish the same for you. Keep up this beautiful work you are doing.

Hello Chris, Thank you so much for your kind words. Perhaps one day, I will post a recipe that speaks to you so well that you try it! ? I am so happy to have you as a part of the Djalali Cooks community! Thank you again, and have a beautiful week. xo Kelly

That was a lot of fun to watch, and the four legged supporting cast was awesome. I think the leftovers pizza is one I would make a lot. I wouldn’t say no to the peach either. I am getting closer to a real pizza now that I e discovered the double 00 soft wheat flour on Amazon. People with wheat and or gluten allergies are saying they can eat it with no problems, and it is supposed to be great for pizzas in particular. Now if I just had a Mugnaini to go with it! I do enjoy how Alex manages to elude the camera every chance he gets. My husband wasn’t a fan of getting his picture taken, so there is no way he would have even put an arm in a movie. Today isn’t that hot, but it’s hot enough to make food uninteresting. So far I’ve had four strawberries. This is a day when even pizza isn’t propelIng me to the kitchen! Happy sizzling Saturday to the five Djalalis, Terry, and pizza lovers everywhere.

Hi Mari! 00 Flour is great, definitely let me know if you try and how it goes for the gluten sensitivity, I have heard that too and I am curious about it. It took a bit of persuasion from me and Mugnaini to get Alex to be in the movie! But in the end he really liked how it turned out. Have a wonderful day, I am so happy you enjoyed our little pizza movie! xo Kelly

Hi Kelly, firstly I want to congratulate you on getting that great deal with the Pizza Oven company ..Mugnaini.. the start of something big I am sure. The video was terrific, not sure how many takes were needed, but you definitely came across as a natural. Great pizza tosses, great editing with the eating of the pizza, and has been mentioned, lovely to hear your voice. Keep up the good work and I am sure many more collaborations will come your way. Happy cooking 🧑🍳
Kelly DjalaliJune 5, 2022 at 8:30 am
Thank you so much, Sally! All of the cooking in the video is one take! I didn’t have enough ingredients to do it more than once – so no pressure (LOL!) but we had to get it in one take. I really enjoyed editing the video though, I think that was one of my favorite parts. The hardest part for me was recording the voice over! I am happy you enjoyed the video, thank you so much! xo Kelly
