Hello welcome! Today I have a fun recipe that could be an appetizer for a holiday get together, a delicious hand held snack, a meal prep item for your office lunch, a savory side…a leftovers transformation. Even if you make these without using leftover mashed potatoes, they’re super easy; especially if you use instant mashed potatoes. Samosas are South Asian savory pastries, usually filled with spiced potatoes, peas and onions, then fried to golden, crispy brown. We are baking ours today, but you could totally do these in batches in the air fryer. Are you ready? Let’s get to it!
First things first, preheat the oven to 350 degrees F. Line a large sheet tray with a piece of parchment paper. We need about 2 cups of mashed potatoes. So if you have leftovers or if you’re making mashed potatoes, move on to that next.
I am using instant mashed potatoes. It’s fast and easy. Other than the mashed potatoes, we have garlic, fresh ginger, onion, fresh cilantro and jalapeño or Serrano peppers and frozen peas. For our spices, we have garam masala, cumin seeds, brown mustard seeds, and turmeric. Then I have two prepared pie doughs.
Prep all the ingredients and we can start our filling with the onions.
Spiced Potato Samosa Filling
In a large skillet over medium heat, sauté the diced onion in a about 1 tablespoon of grapeseed oil. Once the onions are softened and begin to brown around the edges, add the grated ginger, garlic and diced hot pepper. Stir and sauté until fragrant, about 30 seconds.
Then add the spices. Stir the spices into the onion mixture and sauté until fragrant, about 30 seconds.
Then add two cups of mashed potatoes and the frozen peas to the pan and mix well to fully combine.
Once the mixture is smooth and the mashed potatoes have taken on the bright yellow of the turmeric, take the pan off the heat and stir in the chopped cilantro.
Making the Samosas
I transferred the spiced potato mixture to a bowl to help it cool down and so it’s easier to scoop portions.
Set your parchment-lined sheet tray to one side of your workspace. Get a small dish of water to moisten the edges of the pie dough triangles. Unroll one of the pie doughs and slice it into quarters. I use my pizza blade to get a straight cut. Once cut, use your finger to dip into the water and trace the three sides of each triangle.
Use a 1/3 measuring cup to scoop a scant 1/3 cup of the spiced potato mixture. Set the portion in the center of the dough triangle and use water-moistened finger tips to lightly spread the potato mix, leaving a half-inch border of dough to seal up the samosa. Then, just take one long side of the triangle and fold it over. Press the edges together to seal. Transfer the folded and sealed samosas to the sheet tray and repeat with the rest of that dough and the second round. You should have 8 samosas.
Once all 8 are folded, sealed and placed on the sheet tray, brush the tops with egg wash. Then prick the tops with the tines of a fork, or make 3 small cuts with a paring knife. Bake on the center rack in the oven for 30 minutes, or until the Easy Baked Spiced Potato Samosas are golden brown. Transfer to a wire rack to cool slightly and serve while still hot.
Easy Baked Spiced Potato Samosas
It’s not a requirement to serve the Easy Baked Spiced Potato Samosas with chutneys. But it’s highly encouraged for maximum enjoyment. I have a coriander mint chutney and, though a sweet/spicy tamarind sauce is my preferred sweet accompaniment with samosas, I have a mango chutney that is spicy and sweet.

These Easy Baked Spiced Potato Samosas are such a treat. They keep well in a container in the fridge and to reheat, just pop them in a 350 degree oven for about 5-7 minutes to warm through and crisp up the crust. As I mentioned at the top, you can air fry these in batched to get a more authentic fried samosa texture. Set the air fryer to 350 degrees and air fry until golden, about 12 minutes, turning the samosas over halfway through. I hope you give these a try – they are so delicious! Easy Baked Spiced Potato Samosas
South Asian spices give new life to leftover or instant mashed potatoes for this easy baked samosas recipe. A perfect hand-held snack.

December 15, 2022 at 10:46 amWhat a great idea! I haven’t had these for years, and they are so good. These will go quickly once you set them on the appetizer table. My kids loved these, and they are easy for little hands to pick up and wander around with. Big hands too! The smell of spices is so appetizing, and these are delicious. I like a simplified version where you get the taste in a fraction of the time and effort. I use instant potatoes in my hamburger buns, and they are lovely and soft, but hold together perfectly. I always make potatoes the night before I’m going to make them. We discovered a new website this week called “just one cookbook.com”. If anyone is interested in Japanese cooking, she has a lot of recipes, and the pictures are really nice. I love your blog because you always have lovely pictures to go with the great recipes. We all like to know what the finished product looks like, and it’s great to see the shots of the various stages of recipes. Today we were supposed to be hit with an ice storm which didn’t happen, fortunately, although I’m sure someone got hit. My grandson was excited because schools in their area of Va. have a two hour delay. I loved those in high school, because there was always a chance I’d miss a class that I hated, like math.
