Goat Cheese and Mushroom Pizza with Grapes and Amsterdam

Hello and welcome to Pizza and a Movie! Today’s pizza is inspired by the flavors and variety of textures you find on a cheese board. We have soft tangy goat cheese, herby mushrooms, roasted red grapes for a pop of sweetness and walnuts for crunch. It’s a sophisticated set of flavors that work really well on a pizza. And what a beautiful-looking combination of color and texture! The star of this pizza, in my opinion, are the grapes. I look forward to getting creative with mixing up these flavors in the future. Let’s get right to it – Goat Cheese and Mushroom Pizza with Grapes!

Preheat the oven to 425 degrees F, with a pizza stone or steel. Let’s start with sautéing the mushrooms with some rosemary and water. We are starting these mushrooms off in water to help drive off all the mushroom’s moisture content. Sauté the mushrooms and herb sprigs over medium-high heat with about 1/2 cup water and a sprinkling of kosher salt until all the water is cooked off and the skillet is dry. Then add a drizzle of olive oil and sauté the mushrooms in olive oil until they develop some nice browning. Sprinkle with black pepper. Then cut the heat and move the pan off the burner. Discard the herb sprigs.

Build the Goat Cheese and Mushroom Pizza with Grapes

We have our dough stretched on a lightly floured pizza peel. Then we have the goat cheese, washed and dried seedless red grapes, our cooked mushrooms and walnut pieces.

Start by breaking up the log of goat cheese and scattering the pieces evenly over the stretched dough. Then evenly distribute the cooked mushrooms over the cheese.

Evenly dot the top with the red grapes. Follow with scattering walnut pieces over the top. We are ready for the oven!

Bake the pizza for about 7 minutes, or until the dough is set. Then pull out the pizza and brush the crust with olive oil. Slide the pizza back in to finish baking for another 7 minutes, or until the crust is golden.

Let the pizza cool for a few minutes on a wire rack before topping with fresh basil leaves and slicing.

Movie Night: Amsterdam

We have our cheeseboard-inspired Goat Cheese and Mushroom Pizza with Grapes ready so let’s get to the movie! Amsterdam is the new David O. Russell movie starring so many big names I won’t even list them all here. In fact, recognizable actors are popping into nearly every scene in this movie, it feels like a who’s who of great actors. But I will say that Christian Bale is the one of the three main characters and I think he is one of the greatest actors of my generation.

I am a fan of David O. Russell films; I Heart Huckabees and The Fighter are my favorites of his films, and this one is right up there with those two. The trailer does a good job of not giving away too much, and I will avoid that here too because watching this movie unfold without knowing what’s coming made this an absolute joy to watch. Amsterdam is available to watch on HBO Max and Hulu with a premium subscription and available to rent on Apple TV, Amazon Prime Video, and Vudu.

  • 8-oz. Package Mushrooms, sliced
  • Olive Oil

  • 8-oz. Goat Cheese
  • Red Grapes
  • Walnuts
  • Fresh Basil Leaves, for garnish

Instructions

Roll, stretch pr spin your pizza dough out onto a lightly floured pizza peel.

    This is a winning combat ion. That wonderful looking pizza has my nasal over it. It’s like a salad and a pizza in one. I even know where I can get some vegan goat cheese, and I found some gluten free pizza flour on Amazon that I must investigate. The reviews are all positive, so I might give it a try. Christian Bale isn’t my generation, but he is a great actor. When I watch a movie, I see him as the character, and I forget he is an actor. That’s what makes a movie wrk for me. If a move has Sean Connery or Liam Neeson in the movie all I see is the actors chewing up the scenery. Bale loses himself and becomes the character. He doesn’t call attention to himself, and as a viewer, I appreciate that. Happy fabulous Friday to Kelly, Alex, Terry, Gran, and the cuddly canines. In this weather we all could use a cuddly canine, but I will have to make do with two small snuggly parrots. We call them ankle warmers, because they are obsessed with feet. I will bet the leftover pizza would be delicious cold too. You do realize hat you are feeding my mushroom obsession, and I thaink you!.

      Hi Mari, you are so right about Christian Bale. He is really one of the few very recognizable actors that becomes unrecognizable in every role he plays. He’s never playing Christian-Bale-playing-a-character. I am sure you will enjoy this pizza. I have a provocative question: Do all those who hate pineapple on pizza also hate other fruits on pizza too? Or is a pineapple-only bias?         I don’t think so. The idea of grapes on a pizza is delightful, and to stretch a point, tomatoes are a fruit. Pineapple s one of those things you love or you don’t. My husband loved the stuff, but he didn’t like it on pizza. On the other hand he loved it out of a can, on a salad, or a cake, and he liked to toss it on his version of chop suey! It probably is a pineapple only bias, or it just may be that pineapple seems illogical. I don’t think I’ve ever seen strawberries or plums on a pizza either! So we could make the point that people don’t like fruit on pizza. Except for tomatoes. And grapes. The grapes work because the pizza is like a lovely salad in some aspects. Well I don’t think that cleared anything up! When it gets warm, I will try pineapple on my pizza. I think it could work with a spicy sausage (or maybe chorizo) and goat cheese pizza? I wouldn’t necessarily use cut pineapple though. I would use crushed. Just a few seconds in the food processor. Of course then I’d have to drain it before I used it. I actually think I saw nectarines on a pizza in a food magazine once. That’s a big no on that one too. So maybe we are conditioned by habit to not mix things?
