Easy Skillet Taco Dip

Hello Welcome! Since we have the Super Bowl coming up this weekend, I thought a super Easy Skillet Taco Dip might be a good addition to your Super Bowl Spread. The thing is, this one skillet taco dip is great as a meal too. Serve with street taco-size tortillas, corn or flour, and let everyone help themselves to create their own little tacos. This is an easy dish to throw together, mostly with pantry and fridge staples. Let’s do it!

I am starting with a pound of flank steak. You can totally go with ground beef if you like. We will marinate the meat for a bit while we get everything else together. Other than that we have a can of fire roasted diced tomatoes, a can of rinsed and drained black beans, a fresh jalapeño, garlic, a diced onion. We have black olives, a little fresh orange juice, pepper jack and cheddar cheese.

Flank Steak Marinade

First, Preheat the oven to 400 degrees F. Now for the steak, slice the flank steak with the grain into 3-inch chunks. Then slice each 3-inch chunk against the grain into 1/8 to 1/4-inch strips.

Toss the steak strips into a bowl and drizzle with olive oil. Sprinkle the prepped steak with a good pinch of kosher salt, fresh cracked black pepper, about 2 teaspoons of ground cumin and a good shake of oregano. Grate the zest of one orange over the beef and then toss the beef in the oil and seasoning, set aside.

Instead of taco seasoning packet flavor, we are going more toward a carnitas flavor profile; with the orange zest and juice, jalapeño, garlic and onion.

If you’re subbing ground beef, put the ground beef in a bowl and season as outlined for steak, tossing the ground beef in the seasoning. Like making meatballs, be careful not to over mix the ground beef.

Heat an oven safe skillet over medium-high heat for a few minutes, then add the seasoned beef. As soon as the beef is sizzling, add the diced onion. Stir occasionally until the onion begins to soften. If you’re using ground beef, brown the beef until it’s nearly cooked through before adding the onions.

Building the Carnitas-inspired Flavors

Once the onions start to soften, add the diced jalapeño and the minced garlic. Stir to combine and cook for about 1-2 minutes. Then add the orange juice.

Let that orange juice come to a fast simmer. Then add the drained black beans and the fire roasted diced tomatoes. Stir to combine and let the mixture simmer until the liquid has mostly cooked off. Taste the mix for seasoning and add more kosher salt as needed.

When the moisture has mostly cooked off, add chopped cilantro stir to incorporate the cilantro. Then stir in about half of the cheddar and pepper jack cheese.

Once half the cheeses are mixed in, top the Skillet Taco mixture with the remaining cheese and the sliced black olives.

Place the skillet in the preheated oven and bake until all the cheese on top is melted and the Easy Skillet Taco Dip is bubbling around the edges. While the skillet is baking, you can warm corn or flour tortillas and put out a bowl of tortilla chips.

Finishing Touches

When the Easy Skillet Taco Dip comes out of the oven, You can add a few swipes of sour cream to the top. Along with any other toppings you like. I have pickled onions, scallions and more fresh cilantro leaves. Pickled jalapeños would be another great topping.

Easy Skillet Taco Dip with carnitas-inspired flank steak, black beans and fire roasted tomatoes, topped with cheese, cilantro, and sour cream

Ingredients

  • 1 lb. Beef Flank Steak (or Ground Beef)
  • 1 tbsp. Olive Oil
  • 1 tsp. Kosher Salt, plus more to taste
  • Fresh Cracked Black Pepper
  • 2 tsp. Ground Cumin
  • 2 tsp. Dried Oregano
  • 1 Onion, diced
  • 1 Jalapeño, diced (seeds removed or included)
  • 4 cloves Garlic, minced
  • 2-4 tbsp. Fresh Orange Juice
  • 1 15 oz. Can Black Beans, drained and rinsed

  • 1/4 cup Chopped Fresh Cilantro
  • 3/4 cup Grated Cheddar Cheese

    I am guessing that after eating this dip, people won’t care who won the game! They will be too happy and too full to have any opinion on anything, but I say, Go Eagles! As usual I will skip the half time snow. Other years I just watched for the commercials, ut this year I am hoping the Eagles win. My youngest son my grandson are huge Eagles fans. I’m making the Muffuletta and this dip, so that should make most people happy. Thanks for another timely, and delicious recipe. Somehow I managed to have three children who can’t eat cilantro, so I will have all the cilantro I want. Happy Wonderful Wednesday to Kelly, Alex, Terry and the not so terrible trio. Whoever we root for, it will be a wonderful day, and Tom Brady has retired. Again. He hasn’t retired as many times as Elton John, but he has a good start.

    Hi Kelly, there is one thing when I read your recipes that stands out and that is the difference in packaging and definitely brand names. I don’t think I have ever seen a can of olives, nor fire roasted canned tomatoes, I think we would have fun visiting each others Supermarkets, and I admit to doing that when I visit other countries even though we have a very eclectic mix of food varieties, and in recent years a huge variety of Indian foods. Where we live we have quite a big Indian and Sri Lankan community, therefore many shops that sell what they like to eat, they far outweigh the Asian shops these days. Your dip sounds very tasty, by the way what is Pepper Jack cheese?

      Hi Sally, It is funny how different grocery items are. Pepper Jack cheese is Monterey Jack cheese with spicy pepper pieces in it. Monterey Jack is a white cheese, to me, it’s like a cross between low-moisture mozzarella and a light cheddar cheese. Very mild, not sharp at all. That’s funny about the olives and tomatoes though, those are things I would have thought you would have down under. I bet it’s very fun and interesting to shop Sri Lankan ingredients.
