Welcome to Pizza and a Movie on Djalali Cooks! This week we are making the most of our Korean Barbecue Chicken leftovers with Korean Chicken BBQ Pizza. If you make my recipe from Monday for two, chances are you’ll have leftovers. This pizza is a great way to reimagine those leftovers – from rice bowl to pizza. Mozzarella cheese is like a chameleon, it can blend with all kinds of flavors to lend it’s light richness to whatever you can imagine. Kimchi on a pizza? Yes. It’s a wonder kimchi hasn’t become a regular pizza topping. Like pickled jalapeños, kimchi brings a sour, spicy flavor – plus, its funky fermented flavor and plenty of crunch! It’s amazing – Let’s do it!
The Leftovers
So let’s say you made my recipe to the letter, it’s likely you have sauce leftover too, so we will start there, then we have 1-2 small chicken thighs, the kimchi, mozzarella cheese and sliced scallions to top it off.
Preheat the oven with a pizza stone or steel to 425 degrees F. Roll, stretch or spin your prepared pizza dough out to about 12-inches round, on a lightly floured pizza peel. Then, brush the crust with about 2 tablespoons of the Gochujang barbecue sauce. Leave about a 1/2-inch border for the crust. You want enough sauce on there for even coverage, but not for it to be soupy.
Top the sauce with about 1/2 to 3/4 cup of grated mozzarella cheese. Top the cheese with the thinly sliced chicken thighs. Then squeeze the excess liquid from the kimchi and evenly top the chicken and cheese with kimchi.
Top with about 1/4 cup more grated mozzarella and a drizzle of the Gochujang barbecue sauce. We are ready for the oven!
Bake the pizza for about 15-20 minutes, until the crust is puffed and golden and the cheese is melted. When the pizza comes out, let it sit for a few minutes while you thinly slice 1-2 scallions. Sprinkle the scallion slices over the pizza, slice and serve!

Movie Night: The Fabelmans
The recent Steven Spielberg Movie The Fabelmans is based on Spielberg’s own life, and if you’ve seen the documentary Spielberg (streaming on HBO Max), then I think you’ll love this dramatization of his experience. And if you haven’t seen either movie, I suggest watching the documentary first, then watch The Fabelmans. You’ll recognize the specific stories and, I think, you’ll appreciate the attention to detail and loving care that went into recreating the moments in his life through the characters in The Fabelmans.
Like so many other Spielberg movies, The Fabelmans is totally immersive and even at the 2.5 hour end time, you won’t want it to end. I wanted so much to see Sam continue on in his budding career as a director. Comparing footage and Spielberg’s stories about his mom from the documentary to the character of his mother, played by Michelle Williams, is almost eerie. Also the cameo by David Lynch as John Ford is absolutely brilliant! If you haven’t yet seen The Fabelmans, definitely add it to the top of your list!

You come from a line of remarkable women: brave, strong, beautiful, and tenacious. I know what a fight this disease is, and my admiration for your mother who was her caretaker and companion is unending. I know it has been a worry for you as well, thinking, worrying, and praying for both of them. I am happy for Gran that the struggle is over, and that she is with God in heaven, and her new life with Him has begun. The steps of grief can last a long time. When the first wave is over, you will be able to remember the good times and the laughter, the funny, silly things you shared, holidays, birthdays, walking and talking together. and you will laugh through your tears. You will suddenly see her face in your mind, hear her voice, at unexpected times, and the loss will hit you again. Grief isn’t linear. It comes and goes, and it hits when you least expect it. With Alex by your side, your strength will be doubled. Your hearts together are an unbeatable force. Reach out if and when you need us. We are all here for you, and we love you.
Well it seems odd to talk about pizza and a movie after that, but I do love the idea of leftovers for pizza. It’s a winning combination, and everyone likes pizza. This one will definitely be a home run. All of my leftovers are gone, so I’m beginning again. Leftovers rarely last here cause someone is always taking them for lunch and reheating them at work in the microwave. The movie sounds like a good one, and we all need a break from our reality to immerse ourselves in someone else’s! Keep putting up the stainless steel pizza steel and peel set because I am going to buy that. My resistance is wearing down! Every time I see that, my resistance crumbles. I have a ton of pizza cutters and two stones, but I like the idea of stainless steel. Even better than that, I am grateful you are there sharing your recipes and your life. We love you.

April 21, 2023 at 3:05 amHi Kelly, my condolences on the passing of your grandmother, I only caught up with that due to Mari’s comments. Suffering a loss always hard. My ex husband died recently and even though it is 47 years since we parted it was still very sad as we had two children together so there was always that bond. I’m going to have to go back and find your Korean chicken so I can make this pizza, and I love kimchi, well at least the one I buy as there are several different variations. Thanks again for an interesting variation, plus I know it will have the spiciness that my husband loves on a pizza.
