Smoky Barbecue Chicken Pizza and The Report

Hello, welcome to Pizza and a Movie! Today’s pizza will be controversial for some because I put pineapple on it. Given the sweet/savory nature of barbecue sauce, pineapple is a perfect fit. We have leftover rotisserie chicken smothered in barbecue sauce; with smoked mozzarella cheese; red onion slices and pineapple. Our chicken isn’t actually barbecued, so the smoked mozzarella brings a smoky richness. The pineapple plays up the sweet flavors of the barbecue sauce, which itself is a bit spicy. I finished this pie with fresh cilantro for a fresh herby bite. It’s a new kind of Smoky Barbecue Chicken Pizza, and it’s amazing! Let’s get to it.

Pizza Prep

Start by preheating the oven to 450 degrees F with a pizza stone or steel. I have about 1.5 cups of shredded leftover rotisserie chicken in a small bowl. To that I am adding just enough barbecue sauce to fully coat the chicken. Probably about 1/3 cup of sauce. I like this Sriracha and Roasted Garlic Barbecue Sauce from Trader Joe’s. It has really great flavor with a bit of heat.

Otherwise, I have a small can of pineapple pieces; 1/4 of a red onion sliced thinly; and about 1.5 cups of fresh grated smoked mozzarella. On a lightly floured pizza peel, roll, spin or stretch a prepared pizza dough to about 12-inches round.

Start with about 3/4 of the cheese. Spread the cheese evenly over the dough leaving a 1/2-inch border for the crust. Then spread the barbecue chicken evenly over the cheese.

Top the chicken with the remaining cheese. Now, scatter the red onion slices on top.

Finally, dot the top with the pineapple chunks. And this pizza is ready for the oven. Bake the pizza for 10-15 minutes, until the crust is golden brown and the cheese is melted and bubbly.

The pineapple will release a bit of moisture, so you can blot the top of the pie with paper towels. Let the pizza sit for 2 minutes or so before slicing. Meanwhile, rough chop some fresh cilantro. Finish the pie by sprinkling cilantro over the top. Use as much as you like. I like a lot.

Because the barbecue sauce is spicy, smoky, savory and sweet, the pineapple is a perfect match. The onions add a little crunch and allium flavor. All in all, the individual components of this pizza come together for a really great Barbecue Chicken Pizza. Movie Night: The Report

We have our Barbecue Chicken Pizza ready so let’s get to the movie. I totally missed this thriller when it came out in 2019. Surprising because it has a great cast, with Annette Bening, Adam Driver, Jon Hamm, Maura Tierney and Michael C. Hall. Based on actual events, The Report follows the story of the FBI’s investigation into the torture of suspected terrorists by the CIA after 9/11. The investigation is led by FBI Agent Daniel Jones, played by Adam Driver.

I like Adam Driver (full disclosure: I haven’t seen him in the Star Wars movies); in the movies I have seen him in, he fully inhabits his character, giving natural and believable performances. I was unaware of how long this report took to investigate and how hard the CIA tried to cover up the details. Obviously this is a dramatization of actual events, nevertheless it’s an interesting story of a dark period in our recent history. The Report is available to stream on Amazon with a Prime subscription.

Ingredients

    What a great lineup this week for pizza and a movie. In general I’m not a fan of pineapple on pizza, but it makes sense with this one. It sounds refreshing and delicious. Rotisserie chicken is amazing. Especially if you buy it at the store. No need to hit the big box stores, because the grocery store is sure to have it. All the big chain stores have sold a variety of flavors over the years, and one of them now sells a larger sized birds. We are suffering with the weather changed and I’m sick bug. I talked to my daughter last night and she said a huge chunk of her office was out yesterday. Of course in DC, with the weekend coming up, that may not be anything more than jonesing for a four day weekend! At any rate, it was a lot more work for those who weren’t sick. I hope everyone else is staying well and will be enjoying pizza and a movie tonight.
    When I woke up today I glanced at the email and saw that you were in there bright and early. I’m glad you’re okay and that Ian hasn’t given you more grief than he has. I really don’t have anything in particular for Stump The Chef, but I was thinking about paper dolls. When I was a little girl, I loved them, and there was Betsy McCall in McCall’s magazine every issue. My sister and I thoroughly enjoyed cutting out the flimsy dolls and dresses and making up adventures. Over the years I have seen are expensive books of dolls and their clothes. There were First Ladies, there was Queen Elizabeth and Princess Diana. None of which I bought because I was past paper dolls at that point. I do still love a good spectacle, and the death of Queen Elizabeth brought a lot of royal ladies to London. It got me thinking of these women. They do a lot of charity work and appearances for different causes and organizations. If they made books bursting with designer clothes and beautiful Queens and princesses, there are several I would love to see. I would not cut them out, but I would look at them. My first choice is the beautiful, elegant Queen Raina of Jordan. She is petite, beautiful, and totally together. Next is Princess Mary of Denmark, who is married to the crown Prince. She is also intelligent, lovely and elegant, but also casual and sporty on her rare days off. Finally we have Grand Duchess Maria Teresa of Luxembourg. She is very elegant, lovely, and has a very warm, open personality and a sense of fun. Let’s say that to money for the UN, which all of these ladies have worked with, there would be books of paper dolls that would be sold, with all monies going to various children’s charities that the UN administers. After a reception to promote the books and charities, the ladies have the day off. if you brought these Royal ladies to a movie, what would it be? I think they get enough serious things on working days, so pick a good comedy they all would enjoy. Then serve them pizza! What would you serve to a Jordanian, an Australian Dane, and a Cuban Luxembourger? I think the only thing off the table would be pork, because of Rania’s Muslim faith. As far as ai know, everything else goes.

      Hi Mari! I hope this doesn’t seem too crass, but I would show Bridesmaids because that movie is effing hilarious. I don’t care how sophisticated a person you are, if you can’t find one funny thing in that movie…well, I just don’t know. I would serve a super veggie pizza. Low brow comedy with high brow vegetarian pizza. Sautéd mushrooms and greens, with caramelized onions. To finish the pizza, goat cheese and olives dot the top. We are breathing sighs of relief that Ian will not directly hit Savannah and Tybee Island, but of course are sad by the devastation to Florida and what will come next for Charleston and Myrtle Beach.         I wish I had thought of that! Whenever my daughter and I get together we invariably watch a movie, and the funnier the better. Bridesmaids and the Pitch Perfect movies are wonderful, and I have a weakness for anything with Melissa McCarthy, with one exception. I am so glad that you are all okay in Georgia. I have friends in Florida that I haven’t been able to get hold of yet. I am so relieved that my Ian moved from Florida eight years ago. He went through three very bad storms/hurricanes there, and with the final one he endured, he had to replace his roof. We are lucky to live in a. Area where nothing much happens weather wise.
