Spanish Cheeseboard Pizza: The Last of Us

Hello and welcome to Pizza and a Movie on Djalali Cooks! I have done pizzas like this before; where the elements of a cheeseboard come together on a pizza. We have spicy charcuterie with Spanish Chorizo; nutty Manchego cheese; and a sweet component, in this case fig jam; we also have a little acid with our crushed tomatoes. All of this on a base of mozzarella cheese. Every bite is a perfect bite! It’s a Spanish Cheeseboard Pizza!

Preheat your oven to 425 degrees F with a pizza stone or steel, or follow the package directions on your prepared pizza dough.

As I mentioned at the top, we have grated mozzarella, Spanish chorizo, canned crushed tomatoes, fig jam and shallot slices. When the pizza comes out of the oven, we will top the pie with shaved Manchego and minced parsley.

Roll, spin, or stretch the dough out on a lightly floured pizza peel. Top the dough with about 3/4 of the mozzarella cheese. Follow the mozz with dollops of the crushed tomatoes. You will only use a little of the tomatoes, so save the rest in an airtight container in the fridge for another use.

Next add a layer of sliced Spanish chorizo. Then, sprinkle the remaining 1/4 of mozzarella cheese. Top the cheese with dollops of fig jam. Lastly, before the oven, add the shallot slices.

We are ready for the oven! Bake the pizza for 15-20 minutes, until the crust is puffed and golden and the cheese is melted and bubbly. When the pizza comes out, sprinkle the top with the shaved Manchego and minced parsley.

This pie combination has so much umami richness! It’s super savory with a sweetness coming from the fig jam, which, when mixed with the tomato creates a barbecue sauce-like flavor. Spanish chorizo is always great on a pizza, its pepperoni-like flavor mingles perfectly with mozzarella cheese and the nutty manchego.

Movie Night: The Last of Us

We have our Spanish Cheeseboard Pizza ready so let’s get to the show! The Last of Us is a new series on HBO Max. With the fourth episode premiering last Sunday, we’re halfway through the season, so I figured it’s the perfect time to catch up on previous episodes. This series seems to have everyone talking. It’s based on a video game, so there’s that group of conversations. It’s a post-global-pandemic-apocalypse show set in the United States with our main characters running from zombified humans, so there’s that set of commentary. And the pandemic at the crux of the show is not a virus – it’s a fungus, so there’s the food world and the mycology world having their conversations. Just Google The Last of Us, you’ll see what I mean.

You might be thinking, ugh…another zombie apocalypse show. And you’d be right on that account, but you’d be wrong to not watch this show. It’s incredibly compelling. Partly because we humans are infatuated with seeing scenes of what our world might look like after an apocalypse. But also, this show is really well done. It’s well written, acted, and set. But there’s more to this show. Episode three is particularly beautiful. I really don’t want to go into details, because to do so would take a lot away from a first time viewing experience. I will just emphatically encourage you to watch this show, if you haven’t yet. The Last of Us is available on HBO Max with a subscription.

The Spanish Cheeseboard Pizza is loaded with mozzarella, Spanish Chorizo, Manchego Cheese, with dollops of fig jam and crushed tomatoes.

Ingredients

  • 1 Prepared Pizza Dough
  • 1.5 cups Grated Mozzarella Cheese
  • Canned Crushed Tomatoes
  • Spanish Chorizo Slices
  • Fig Jam
  • 1 Shallot, sliced thin
  • Minced Fresh Parsley

Instructions

    I admit to not being in to zombies at any time, but my boys are, so we will give that a go. I like limited series where it’s all over quickly. We have watched a lot of Netflix series the last few years, and while I would love to binge watch things in one day, life interferes. The pizza looks great with or without zombies. This series would be fun to watch waiting for the Super Bowl to begin, instead of the brain numbing sports shows. The pizza would be great too for the game, but my menu is set, and we almost always have pizza on Friday. Have a great time on the cruise. When we lived in Iowa, there were riverboats docked there, and the did limited cruises. The big draw was gambling, and they had a cheap breakfast buffets daily. We never went, but the older people loved it. I wanted to go on a cruise, but the only water my husband liked was in a swimming pool. He wouldn’t get on a boat, and I didn’t like flying. It’s no wonder we never went anywhere! Have a great cruise ladies.

    Hi Kelly, firstly enjoy your time away with Beth. The pizza looks fab, chorizo is pretty much a must for us with pizzas AND pasta, love lots of cheese, the jam is a surprise but can understand where it fits in. Did you drain the crushed tomatoes? I’m sure you did otherwise it would have been quite wet, even sliced tomato can create a soggy dough. Good on you for being so organised with your posts, I am up to April 1 with mine on Substack as we are going away this coming week and again early March, finished my latest read of The Painters Apprentice which I loved after trying to get into it for the second time and am half way through another painting, but a challenge this one.
