Hello and welcome to Pizza and a Movie! This week’s pizza combination is about as simple as you can get – a basic cheese and tomato pizza. But make it brie with heirloom cherry tomatoes, and if you’re keeping it simple, you might as well brush that crust with some garlicky olive oil. We will finish the pizza with some fresh rosemary. A super simple vegetarian pizza with rich and gooey melted brie and fresh summer tomatoes. Let’s do it!
Preheat the oven to 450 degrees with a pizza stone or steel. For the garlic olive oil, just mince or press a few cloves of garlic into about 1/4 cup of olive oil. We won’t use all of it on the pizza, but it’s great for dipping and it will keep in the fridge.
Building the Tomato and Brie Pizza
Roll spin or stretch the dough to about 12-inches round. Lay the dough on a floured pizza peel. Brush the entire dough with the garlic olive oil. After you brush on the olive oil, give the dough a shimmy to ensure it’s not stuck to the peel. If it is stuck in a spot, carefully fold or lift the dough to access the spot. Toss a pinch of flour under the dough. Give the peel another shimmy. When the whole dough moves with the shimmy, carry on with building the Tomato and Brie Pizza.
Lay the long slices of brie cheese on the dough. Any arrangement is fine, just look for even coverage. Leave a 1/2-inch or so of dough around the edge for a crust.
Now add the quartered cherry or grape tomatoes. Scatter the slices evenly over the brie.
We are ready for the oven! Bake the pizza for 10-15 minutes, until the crust is puffed and golden and the brie is melted and beginning to brown in some spots.
When the pizza comes out of the oven, mince up a little fresh herb, I am using rosemary, but thyme, basil, oregano or parsley would all be good options. Sprinkle the minced herb on top, slice and enjoy!
This is a simple cheese and tomato pizza, but by using brie instead of mozzarella, it has a whole other flavor profile. This will be the case with any cheese you use. Elevating a cheese and tomato pizza by changing the cheese is a simple way to reinvent the wheel.
Movie Night: Better Call Saul
We have our Tomato and Brie Pizza ready so let’s get to the show! This week I have another TV show to recommend. Better Call Saul is the prequel to the amazing AMC show Breaking Bad. BCS’s five seasons follow the backstories of several Breaking Bad characters and their lives leading up to the beginning of Breaking Bad. Namely this series gives us the rich backstory of Jimmy McGill (who becomes Saul Goodman). We get to learn more of the story and inner workings of the cartel and Gus Fring’s operations. Currently, Better Call Saul is in its fifth and final season, with three episodes left to air.
Even if you haven’t watched Breaking Bad, Better Call Saul is a beautifully crafted series, with rich characters and plenty of action and deep, compelling story lines. I watched Breaking Bad when it was on AMC in 2008-2013. I only recently started watching Better Call Saul and it’s been great to return to the Breaking Bad universe. Seeing how the writers have cleverly woven the two series together is really entertaining and rewarding. My plan is to rewatch Breaking Bad after Better Call Saul wraps up. Ingredients

Usually it’s wall to wall people in there, but today there were maybe ten. Good thing I didn’t open my iPad there. Everyone would have been having a foodgasm (I made that word up, I think) when they saw that pizza.. The tomatoes alone do it for me, but when you add pizza to that, it’s perfection on a plate.
