White Cake with Malted Milk Chocolate Frosting

Hello and welcome to Djalali Cooks. Sometimes a random Thursday calls for cake. Or perhaps you need an amazingly simple, yet utterly delicious cake for a potluck, birthday party or other festivity. Hello, sheet cake. While this white cake is tender, moist and wonderful with any frosting you choose, the Malted Milk Chocolate frosting really makes this cake special. The meringue buttercream is silky smooth and the malted milk flavor is an unexpected twist. Let’s do it – White Cake with Malted Milk Chocolate Frosting.

White Cake

Adjust an oven rack to the middle position and preheat the oven to 350 degrees F. Grease and flour a 9×13-inch baking pan. If you want to remove the cake from the pan, grease it, line it with parchment, then grease and flour the parchment. I am leaving this cake in the pan because this pan has a lid which will make storing or transporting the cake easy.

Cake flour, sugar, baking powder, salt, vanilla, egg whites, butter and milk. That’s it! Whisk the egg whites, milk and vanilla together in a small bowl. Then, in a stand mixer with the paddle attachment, mix the flour, sugar, baking powder and salt together on low until combined. Then add the butter a few small cubes at a time and mix until there are only pea-sized pieces of butter left.

Pour about half of the milk mixture into the dry mixture and increase the speed to medium-high. Beat until light and fluffy.

Now, reduce speed to medium-low and pour in the rest of the milk mixture and beat until incorporated, about 30 seconds. The mixture may look broken at this point. Beat for several seconds by hand.

Pour the batter into the prepared baking pan and smooth the top with a silicone spatula. Tap the pan a few times on the counter to settle the batter and remove any air pockets.

Bake the cake for about 25 minutes. Test with a wooden skewer or cake tester, it should come out mostly clean but with a few crumbs attached. Let cake cool in the pan, set on a wire cooling rack, until completely cool.

Malted Milk Chocolate Frosting

Meanwhile, we can make the frosting. This frosting is a cooked buttercream, or Swiss meringue style frosting. Whereby we heat the egg whites to 150 degrees before whipping them with butter, sugar, chocolate and for this frosting, malted milk powder.

Start by setting up a saucepan with a couple inches of water to simmer. Now, melt the six ounces of chocolate chips in the microwave, on 50% power for about 1 minute. Stir the chocolate halfway through. Once the chocolate is melted, we want it to cool down to between 85 and 100 degrees F. before adding it to the frosting. So set the chocolate aside to cool. By now, the water in the pan should be simmering.

Combine the egg whites, sugar and salt in the bowl of your stand mixer and set the bowl on top of the simmering water. Whisk gently but consistently until the mixture is slightly thicker and foamy. Temp it, we are looking for 150 degrees. This should only take about 2-3 minutes.

Take the bowl to your stand mixer fixed with the whisk attachment. Beat the mixture on medium speed until it’s the thick and foamy and has slightly cooled – about 1-2 minutes. With the mixer still running, add the softened butter, one piece at a time and beat until the mixture is smooth and creamy. About halfway through adding the butter, the mixture may look curdled. That’s OK. Keep whisking and adding butter.

Once all the butter is added, add the cooled melted chocolate and the malted milk powder. Mix until combined then increase the speed to medium-high and beat until the frosting is shiny, light, fluffy and thoroughly combined. Scrape down the sides as needed.

Ready to Frost!

After the cake is completely cool, it’s time to frost. Frosting a sheet cake is super simple. Use a silicone spatula to scrape the frosting out of the bowl, directly onto the cake.

Use a large offset spatula to smooth the frosting evenly over the top of the cake. Get as zen as you want with this process. Making those swirls can be quite meditative and therapeutic.

Moist, tender white sheet cake with malted milk chocolate buttercream frosting is an unexpected treat, perfect for any upcoming occasion.

Ingredients

  • White Cake
  • 1 cup Whole Milk, room temperature

  • 2.25 cups Cake Flour
  • 1.75 cups Sugar

  • 12 tbsp. Unsalted Butter, cut into small cubes and softened

  • 1/4 cup Granulated Sugar
  • 2 Large Egg Whites
  • Pinch Fine Sea Salt
  • 12 tbsp. Unsalted Butter, softened and cut into 1-tablespoon pieces
  • 6 oz. Milk Chocolate Chips, melted and cooled to 85-100 degrees F.
  • 1/2 tsp. Vanilla Extract
  • 1/4 cup Malted Milk Powder

    What a lovely cake that is. White cake is my very favorite cake, and this one looks so light, as though it could float off the plate. When I could still eat wheat, my husband bought me a white cake with white frosting every year for my birthday. It was available year round from the freezer case at Krogers or Eagles, but I had no interest in it other than my birthday, and I always baked cakes, pies, cookies, and bread myself. Pepperidge Farm was only for birthdays. If they had sold it with chocolate frosting, I would have had him buy that one instead! Birthday or not, this is one glorious cake, and I will make it soon. Happy Thursday Kelly, Alex, Terry and the fur children. Sunshine again today, but snow for the weekend, purportedly. It should be illegal. Snow should only be in the middle of the week, and then no more than an inch.
