Hello and welcome! Let’s start this week off with an easy Avocado Toast Trio. I love Avocado toast, it’s so easy and customizable. They go sweet or savory and are perfect for breakfast, lunch or dinner. And, they’re a perfect meal to prepare for just yourself. My favorite go-to is with almond butter, honey and red pepper flakes, because it’s so easy. But if I want to get fancy the other two I will share today are just as perfect. So, let’s get to my Avocado Toast Trio.
The Toast
For avocado toast, I like to cut thick slices of a country loaf or sourdough. Today I have a sesame seeded country loaf. Brush both sides with olive oil and toast them in the oven.
Lay the slices on a rimmed sheet tray and broil from the middle rack of the oven, so they toast slowly and evenly. I watch them closely and flip them once they’ve gotten golden.
Asparagus, Radish and Pecorino
First, I have a version that is great for spring; with asparagus, radishes, and pecorino. It’s super fresh and has a great crunch from the radishes. I set a bundle of asparagus on the rimmed sheet tray with the bread as it toasted. This slightly roasted the asparagus, to take the raw edge off, but still left them firm.
Typically, I slice the avocados and scoop them out of the skin, then when I put them on the bread I squish them a little so there aren’t whole slices that tend to slide out when you take a bite. After spreading the avocado, lay on a few slices of radish. Then top with asparagus. I have some thinly sliced preserved lemon which gives savory umami and brightness. If you don’t have preserved lemon, try some lemon zest. Break apart a few pieces of shaved pecorino and sprinkle over the top.
This toast is bright in flavor and color; it’s fresh and light and has a ton of great texture. This one is is best eaten with a knife and fork!
Fried Egg Avo Toast
Another knife and fork toast, this one is hard to beat with its fried egg and chili crunch. Perfect for breakfast – or any time! Fresh tomato gives some acidity to balance the creamy richness of the avocado and the egg. The chili crunch adds texture and only a little heat, but really goes a long way with this avocado toast.
Almond Butter and Honey
As I mentioned at the top, this one is my go-to avo toast. Whenever I need a quick bite before a yoga class or if time is short, it’s an easy one to put together. For this one, I usually leave the avocado in slices. For one, the almond butter is soft and won’t hold up to squishing the avocado and spreading it; and since there aren’t veggies on top of the avocado slices, the slices aren’t going to fall off.

Smear on a good layer of almond butter and lay the avocado slices on top. Drizzle with honey and top with red pepper flakes and flaky sea salt.

Avocado Toast Trio
Three easy and distinct and avocado toasts. Fresh ingredients make it perfect for snacking or for a light meal any time of day.
Ingredients
- Asparagus, Radish and Pecorino
- Country Bread or Sourdough, thickly sliced
- Olive Oil
- 1/2 Avocado, sliced
- 4-5 Asparagus Spears, cut into thirds or half
- 1/2 Radish, thinly sliced
- Preserved Lemon or Lemon Zest
- Pecorino or Parmesan, shaved and broken into bits
- Fried Egg Avo Toast
- Country Bread or Sourdough, thickly sliced
- Olive Oil
- 1/2 Avocado, sliced
- Tomato, sliced
- Flaky Sea Salt
- Fresh Cracked Black Pepper
- 1 Fried Egg
- Scallions, sliced
- Chili Crunch
- Almond Butter and Honey
- Country Bread or Sourdough, thickly sliced
- Olive Oil
- 1/2 Avocado, sliced
- Almond Butter
- Honey
- Red Pepper Flakes
- Flaky Sea Salt
Instructions
Brush Olive Oil on both sides of bread and place bread on a rimmed baking sheet on the middle rack of the oven.
Broil toasts until golden on both sides, flipping partway through.
Asparagus, Radish and Pecorino
Lay the asparagus spears on the rimmed baking sheet with the toasts.
Top the toast with avocado, radishes, asparagus, preserved lemon and pecorino.
Fried Egg Avo Toast
Top the toast with avocado, tomato slices, salt and pepper. Lay fried egg on top, sprinkle on scallions and spoon on desired amount of chili crunch.
Almond Butter and Honey
Top the toast with almond butter, avocado, drizzle on honey and sprinkle with red pepper flakes and flaky sea salt.
