Hello and welcome to this very special edition of Pizza and a Movie! I have mentioned the company we bought our wood fired oven from a few times before on the blog; and back in January, Mugnaini (moon-ya-ini) reached out to me about doing a collaboration. Of course I was super excited to work with them because we have been big fans of theirs since we went to the Mugnaini showroom for a cooking demonstration years ago. So today, instead of a movie recommendation to share with you, I have our movie! Djalali Cooks with Mugnaini. In addition to this being my first collaboration, it’s also my first video on my YouTube channel. I hope you enjoy the movie!
Djalali Cooks with Mugnaini
You may recognize the pizzas featured in the video; one of them is a pizza version of my Peach Caprese Salad. The other is a new take on a Mexican-style pizza. I use Andrea Mugnaini’s recipe for 3 Hour Pizza Dough, from her book, The Art of Wood Fired Cooking. If you’re interested in wood fired cooking, this cookbook is must-have! It’s chock full of great recipes that are surprisingly simple to prepare.
The Georgia Peach Pizza is simply mozzarella and sliced fresh peaches going into the oven. Coming out of the oven, it gets a drizzle of balsamic glaze and fresh basil leaves.
The Mexican Pizza utilizes leftover smoked pork shoulder, but you can substitute cooked Mexican chorizo. Mozzarella, smoked pulled pork, salsa verde, fresh corn kernels and pepper jack cheese top this pie. When it’s out of the oven, it gets some fresh cilantro.

I had no idea it was only 90 seconds in a pizza oven. This was so much fun! I hope you do more videos. June 4, 2022 at 2:33 pmThat was a lot of fun to watch, and the four legged supporting cast was awesome. I think the leftovers pizza is one I would make a lot. I wouldn’t say no to the peach either. I am getting closer to a real pizza now that I e discovered the double 00 soft wheat flour on Amazon. People with wheat and or gluten allergies are saying they can eat it with no problems, and it is supposed to be great for pizzas in particular. Now if I just had a Mugnaini to go with it! I do enjoy how Alex manages to elude the camera every chance he gets. My husband wasn’t a fan of getting his picture taken, so there is no way he would have even put an arm in a movie. Today isn’t that hot, but it’s hot enough to make food uninteresting. So far I’ve had four strawberries. This is a day when even pizza isn’t propelIng me to the kitchen! The video was terrific, not sure how many takes were needed, but you definitely came across as a natural. I didn’t have enough ingredients to do it more than once – so no pressure (LOL!) but we had to get it in one take. I really enjoyed editing the video though, I think that was one of my favorite parts. The hardest part for me was recording the voice over!
