Bacon Tomato Pizza with Corn and 1883

Hello and welcome to Pizza and a Movie! Today we have a really wonderful, salty sweet, smoky pizza with bacon, cherry tomatoes and fire roasted corn. Fresh and low-moisture mozzarella gives this pizza great mix of cheesy textures and flavor. Our movie today is a TV show that is more like a 10-hour movie, broken into hour-long bites. 1883 is the Yellowstone origin story, starting with the Dutton family making their way west in 1883. If you love westerns and period movies, this show is for you! Let’s get to the Bacon Tomato Pizza with Corn!

The only prep we have for this pizza is baking off the bacon slices and slicing the cherry tomatoes in half. Once we have the bacon baked, cut the strips into bite size pieces and we are set to go. Preheat your oven with a pizza stone or steel, at 450 degrees F, for about one hour.

Roll, stretch or spin your pizza dough to a 12 to 14-inch round, flour your peel and lay the dough down on the peel. We will start with the low-moisture mozzarella. The brand I have today is a block of mozzarella that just soft enough to crumble if I try to grate it, so I pull it apart like string cheese.

Start with the low-moisture mozzarella and top that with the bacon pieces. Then add the tomatoes.

Top the bacon and tomatoes with torn pieces of fresh mozzarella.

Sprinkle the frozen fire-roasted corn on top and we are ready for the oven!

Bake for 10-15 minutes, until the cheese is melted and the crust is puffy and golden.

If you want to add a little color, sprinkle fresh chopped parsley over the pizza. Slice and serve!

Bacon Tomato Pizza with Corn!

I really love the flavor and texture variation in this pizza. The bacon is savory and smoky which, in combination with the sweet pops of corn and bursts of tomato, really makes for a satisfying bite! The low-moisture mozz makes a great base, keeping the bottom crust crisp, while the fresh mozz on top is chewy, rich and creamy.

Movie Night: 1883

We have our Bacon Tomato Pizza with Corn ready, so let’s get to the show! Even if you’re not an avid Yellowstone fan, you will enjoy 1883. The show begins in Texas, with the Dutton family setting off as part of a wagon train of immigrants headed to Oregon. The wagon train is led by Shea (played by the amazing Sam Elliott) and Thomas (LaMonica Garrett); two men who fought together in the Civil War and are now Pinkerton agents. Tim McGraw (James Dutton), Faith Hill (Margaret Dutton) and Isabel May (Elsa Dutton) round out the core cast. This is an epic film, partitioned into one hour segments; it’s the most cinematic television show ever made, in my opinion.

Beautifully shot, directed, scored and acted – Taylor Sheridan has written a gorgeous story with drama, action and wonderfully rich characters. A definite must-see, watch 1883 on Paramount Plus, new episodes appear on Sundays.

Salty, sweet, smoky! With bacon, cherry tomatoes and fire roasted corn. Fresh and low-moisture mozzarella give a great mix of cheesy texture and flavor.

Ingredients

  • 6-8 Strips of Bacon, cooked until lightly crisp
  • 1 Prepared Pizza Dough
  • 1 cup Low-Moisture Mozzarella Cheese
  • 1 cup Halved Cherry Tomatoes
  • 1/4-1/2 cup Fresh Mozzarella Cheese
  • 1 cup Frozen Fire-Roasted Corn (or plain frozen corn)
  • Chopped Fresh Parsley, for garnish

Instructions

    Bacon and Sam Waterston is a match made in TV Heaven. My sons and grandsons love steak and burgers, but bacon holds a special place in their hearts. They will be trying to eat this bacon vicariously until it comes out of the oven. The pizza and 1883 both look like winners, and I will happily indulge in a little pizza, and a lot of 1883. My husband would have loved both. The acting looks superb, and there are just so many things to like about this (Sam Waterston, Sam Waterston, and more Sam Waterston.). It has been awhile since we last played Stump The Chef. The chef is never stumped, so we get even more great ideas for fabulous foods. This weeks edition is a mashup of French people and Valentines Day. I have been watching a lot of Netflix due to illness, and my newest obsession is The Parisian Agency. It follows the Kretz family and their high end real estate agency. There is some fabulous house porn. I wish there were more, but we do get to see the properties, and we follow the Kretz family and what they are doing. The family is very close knit, so it’s a delight to watch their interactions. Three of the four Kretz sons are involved in the business. The fourth is only fourteen, so he’s not there yet, but might be in ten year’s time. The family is very likable and amusing, and I like them all, but the runaway star of the show has to be the fabulous MaJo. She is a very mischievous eighty something grandmere, and dispenses love, humor, compassion and great advice. As a side story, she is twice widowed and looking for love. At the end of the five episode first season, she and her man friend, Jeannot, appear to have made a solid connection. For Valentines Day, I think we should send them out to dinner somewhere nice that won’t break the bank too much. Plan their menu including wine and dessert. Jeannot is Corsican so that could influence the menu. If you like France, you will love The Parisian Agency. French accents are my jam, and English subtitles make it a jelly roll.       I am so happy to see you back here today, Mari! I am sorry you weren’t feeling well, and I am so relieved that you are feeling better. 1883 stars Sam Elliott, but Sam Waterston is great too! (I know you meant Elliott ?) I haven’t seen the Parisian Agency, I don’t watch reality TV (except for Bakeoff), but given your high praise, I will have to make an exception!
      I think MaJo and Jeannot can go for some classic French dishes without breaking the bank, but since MaJo is in real estate, and I am not much of a wine drinker, I will insist they splurge on champagne. Champagne too, to cut through the richness of a meal starting with escargot – in butter and herbs, of course. We can keep the main humble with Coq au Vin, or Bœuf Bourguignon. A cheese plate with gooey Camembert to finish. Then let’s go with a classic chocolate soufflé because nothing says Valentine’s like chocolate.
      Perhaps the native French folks would think this is somewhat pedestrian, but it’s what I would order. Classic French fare. But perhaps I am just really hungry at this moment..Lol! I am off to get started on a pasta dish for next week… We have missed you Mari. ? xo Kelly

        Yep, I did mean Sam Elliott. This is what happens when I stay up too late and get up way too early! The brain is scrambled until at least noon. The menu was perfect and I think the lovebirds would have taken their eyes off each other long enough to thoroughly enjoy your menu. It is classic French and I think anyone would enjoy it it. Champagne is a great idea, because I am not a wine drinker either. The only one I know about is Manischewitz and that’s only because Passover is coming up. When I was a child, I would see ads for it this time of year, and in high school one of my friends was given to bellowing the name when she was miffed about something. The rest of us were more inclined to blunt Anglo Saxon exclamations. I am pretty sure the nuns would not have approved. I got into enough mischief to know what they did and didn’t approve of. I’m pretty sure they wouldn’t have minded Manischewitz at all, but I’d have been in detention until graduation. It’s good to be back and feeling better. ??

    This pizza looks really good plain and simple but bursting with flavor from the bacon tomato and roasted corn. We are having this tonight Yumm can’t wait. Great movie choice 1883 is amazing all the characters play their parts well…. Can’t wait for season 2 have a great weekend go Bangles ❤️? mom

    Hi Kelly, every time I read your blog my mouth starts watering…. Simple but flavoursome, the best way to have pizza. I haven’t seen frozen Fire Roasted Corn in our supermarkets, but then I guess I rarely go to the freezer department, anyway I am sure I could roast my own on the bbq. Your Friday night pizzas remind me of when on Friday we would always have Pasta, or when I was working Thursday’s was takeaway Chinese, particularly Khong Pow Chicken. I checked out 1883 and I could watch it on Prime, but it would have to be in my iPad. It certainly sounds like something we would enjoy. Have a lovely weekend and a special Valentines Day. For us to celebrate I have ordered a meal online from a company here called Providoor which started up when we began our lockdowns. Many of the top restaurants joined and has been a great way for us to test out their menus. Monday for us will be Tokyo Tina’s. I still have to do some of the prep, but otherwise it is all set ready to go.

      Sounds like a wonderful Valentine’s Day dinner, Sally! The fire roasted corn is something I found at a store we have in the states called Trader Joe’s. They are well-known for having interesting things like that. Charring the corn on the stovetop or in the oven works well too. I have replicated the fire-roasted char on the stovetop for Esquites.
