Chipotle Chicken Pizza and Downton Abbey

Hello and welcome to Pizza and a Movie! In preparation for Downton Abbey: A New Era, which premiers in the US today, I am rewatching the first film, from 2019. To go along with our movie today, we have a Chipotle Chicken Pizza. This recipe can be considered a bit of a meal prep; we will use half the roasted chicken breast strips for this pizza. Stay tuned for another recipe featuring the leftover Chipotle Chicken next week. Let’s get right to it!

If you’ve been following Pizza and a Movie for a bit, you will remember that when I make pizza in the kitchen oven, I typically use a store-bought prepared pizza dough. Today though, I made dough from scratch. I used a recipe I found on NYT Cooking; It’s an adapted recipe from Roberta’s Pizzeria in New York.

I had high hopes for this dough, everything was going right until it didn’t rise much and stayed very pale in color coming out of the oven. The flavor was still great and the dough cooked well enough. So maybe it was over or under proofed? I will never know for sure, but it didn’t keep me from enjoying this Chipotle Chicken Pizza!

Chipotle Chicken

As I mentioned at the top, we can think of this preparation as meal prep. I am marinating and roasting about 2 pounds of chicken breast strips. In a large bowl, I have the chicken strips and to that, I am adding about 1 tablespoon of olive oil and 1 tablespoon of chipotle peppers in adobo sauce. I mashed the peppers in the can with a silicone spatula. The chipotles in adobo are pretty spicy and 1 tablespoon was a good amount of spice, but if you like it really spicy, add as much as you like!

Stir the chipotle and adobo into the chicken strips, add the juice of 1 lime and a good pinch of kosher salt. Give it another stir and let that sit while the oven preheats to 400 degrees F. When the oven is at temp, spread the chicken strips out in a single layer on a sheet tray and sprinkle with a few more pinches of kosher salt. Bake for 15-20 minutes, until the internal temperature reads 165 degrees F on an instant read thermometer.

Let the chicken strips cool and package up half of them for another use. For the other several strips, slice them into bite size pieces and set aside.

Chipotle Chicken Pizza

Increase the oven temperature to 450 degrees F, with a pizza steel or stone. (For this homemade dough I upped the temp in my oven to 500 degrees F.) Let the stone get hot for about 40 minutes. Meanwhile, grate mozzarella and sharp cheddar cheese; thinly slice 1 green bell pepper; thinly slice 2-3 scallions. The other ingredient we will use to top this pizza is dried oregano.

On a lightly floured pizza peel, roll spin, pull or stretch your prepared pizza dough out to about a 12-inch round. For the first layer, top the dough with mozzarella and cheddar cheese.

Top the cheese with the bite size chipotle chicken. Top the chicken with bell pepper slices. Then add another sprinkling of cheddar and mozzarella cheese.

Top the cheese with a sprinkling of dried oregano and the sliced scallions. Bake the pizza for about 15 minutes until the cheese is melted and bubbly and the crust is puffed and golden brown.

So you can see my crust did not get golden, it did not puff very much.

If we look at the bottom, the crust is golden and crispy. If we look at the crumb, we can see it is fully cooked. I just lost out on a puffy risen, golden crust.

Despite the sad performance of the dough, this pizza is super flavorful and really delicious. The combination of spicy chipotle chicken and bright, crunchy green bell peppers is a fantastic combination; add the cheddar cheese, scallions and the oregano and you really have a winning combo!

Movie Night: Downton Abbey (2019)

We have our Chipotle Chicken Pizza ready, so let’s get to the movie! It might come as no surprise given some of the other shows and movies I have recommended here that I am big fan of Downton Abbey. In anticipation for the new film (which opens today), Downton Abbey: A New Era I wanted to rewatch the first film, Downton Abbey, from 2019. If you haven’t yet seen the first film, definitely give it a watch before heading out to the theater to see the new movie.

This first film picks up basically where the TV Show leaves off. We get to catch up with the Crawley family as the film focuses on a visit to Downton from King George V. I will leave out the other story lines to avoid spoilers in case you haven’t yet seen the movie. It’s wonderful to have the opportunity to revisit the Downton universe, both with this film and the new one. I hope you catch both! This Chipotle Chicken Pizza features roasted spicy chipotle chicken with green bell pepper, cheddar, scallions and oregano. Spicy and fresh.

Ingredients

  • 2 lbs. Boneless, Skinless Chicken Breast Strips
  • 1 tbsp. Olive Oil
  • 1 tbsp. Chipotle Peppers in Adobo Sauce (peppers sliced, or mashed in sauce)
  • Juice of 1 Lime
  • Kosher Salt, to taste
  • 1 prepared Pizza Dough
  • 1 cup Grated Mozzarella Cheese
  • 1/2 cup Grated Sharp Cheddar Cheese
  • 1 Green Bell Pepper, sliced thin
  • 2-3 Scallions, sliced thin
  • Sprinkling of Dried Oregano

Instructions

Place the chicken strips in a large bowl.

    Two words to remember today: Maggie Smith. She really made Downton what it was. They could have hired any English actress of a certain age, and it would have been fine, but fortunately for us, they hired the best of the best. She can do more with a look, a sniff, or a twist to the lips, than most people. What I like about her is that she never overdoes it. She does what the scene calls for, no more and no less. As always, the pizza sounds amazing and I can’t wait to try it. Where did you get that snazzy citrus squeezer? I’ve had several plastic ones over the years, and they have all disappeared in moves. I think a nice weighty metal one would be harder to lose, and somehow, more satisfying to use. Now we leave the Granthams behind, reluctantly, and move on to this week’s edition of Stump The Chef. Our first contender is one of my favorite shows growing up. I always loved fairy tales and fantasies, so Bewitched was something I had to watch. My parents weren’t too ken and ignored it, but the five of us thought it was a hoot. Make that four of us. My older sister considered herself too grown up for witches, although when it ran in syndication years later, her kids watched it. My kids liked it but they had other things they preferred.

    What can you give someone who can magically whip up something with a twitch of her nose, a snap of her fingers, or a spell? She could zap something out of nowhere in no time at all, so if you were making Samantha a pizza, what would you make? Our second contender is The Wild Wild West. For those of you who don’t know it, think of James Bond with a sidekick, awesome gadgets, and a penchant for the ladies. They had their own private train car that got pulled wherever President Grant sent them, it was fun, a bit campy, and didn’t take itself too seriously. My Dad and my brothers liked it, so we watched it every week. What kind of pizza do you make for two secret agents who have never heard of pizza? Our third contender is Secret Agent Man with Patrick McGoohan. In Britain it was called Danger Man, but here it was called Secret Agent Man. Cue Johnny Rivers, and I do still like that song. That was my Mom’s show. To be honest, it was mine too. Possibly one of the few things my mother and I agreed on was that Patrick McGoohan was hot. In later years, he was a favorite actor because of the irony with which he infused his roles, and as an added bonus, my husband enjoyed watching him too. This secret agent surely knew about pizza, so what will you make for him?

      Hi Mari! I am happy you have some nice weather! What to make for Samantha is tough, she can conjure up anything she wants. That said, she was always so gracious – especially when Darren’s boss came over for dinner. I think since Samantha always appreciated having a regular life, I would make her a four cheese pizza. Simple, yet remarkable.
      To ease the shock of pizza for the Wild Wild West secret agents, I would do something with pot roast – so, roasted pork shoulder, mozzarella cheese and then top it with chili crunch – to give it a kick.
      For Secret Agent Man, like James Bond, it would be something sophisticated like lobster with a cream sauce base.

    This looks good and I have all of the ingredients, yea me. And I have also rewatched downtown abbey the new era it was really good to refresh my memory and to get ready for the new one… I will keep you posted ❤️🤗mom

    Saw the new film last week. I am sure you will love it. The costumes and sets are wonderful and the film depicts such a gracious era.
