Chicken Parmesan Pizza and Confess, Fletch

Hello, welcome to Pizza and a Movie! After skipping last week in favor of Leftover Turkey Sandwiches, we are back today with a seriously amazing pizza. If you have been with me this week, you know that on Wednesday we had The Best Chicken Parmesan Sandwiches. I knew ahead that I would turn those leftovers into a pizza so here we are today. Our Chicken Parm leftovers become a fantastic pizza. This is an easy one, so let’s get to it!

Preheat the oven to 400 degrees F, with a pizza stone or steel. I am using a different prepared pizza dough today than I normally use. Plus this pizza is piled high with toppings so I am baking this pizza at a lower temperature for a little longer. This will give all the toppings ample time to heat through. Set your oven temp to whatever your prepared pizza dough package directs.

Then the prep is really easy, just chopping up our ingredients. I am slicing my two remaining breaded and fried chicken cutlets in half lengthwise and then into thin strips. Fresh mozzarella takes a bit to melt so I am slicing each round slice into quarters.

Roll, stretch, unfold, or spin your prepared dough out to about 12-inches round, on a lightly floured pizza peel. You can also do this on an oiled sheet tray, or pan.

Start with the cheese. Scatter about half of the fresh mozzarella around the top of the dough. I have about 1/2 cup of sauce leftover for the Chicken Parm sandwiches and I am just going to dollop the sauce around the top of the dough and cheese.

Top this with the chicken strips. Then top the chicken strips with a few more pieces of the fresh mozzarella. You will notice I am not using all of the chicken or the cheese. Don’t get too crazy with toppings or else the pizza won’t cook evenly.

Sprinkle the whole top with grated Parmesan Cheese and we are ready for the oven.

Bake the pizza according to the dough package’s directions. I am baking this at 400 degrees instead of 450, so I will let the pizza bake for about 20 minutes, versus the usual 10-12. Halfway through, I pulled out the pizza and brushed olive oil on the crust.

Fresh mozzarella is a wet topping, so I am letting the baked pizza cool slightly on a wire rack so the bottom doesn’t get soggy as it cools. Top the baked pizza with the roasted Poblano Pepper relish we made for the Chicken Parmesan Sandwiches.

Slide the pizza onto a cutting board to slice. Then, my trick for keeping the bottom crisp is to place the wire rack in a sheet pan and then transfer the slices back onto the wire rack. I am sure you can imagine the flavors of this pizza. The time in the oven gave the breaded fried chicken time to crisp back up; the mozzarella is gooey and rich; the roasted pepper relish adds the acid and zing to balance out this Chicken Parmesan Pizza.

Movie Night: Confess, Fletch

We have our Chicken Parmesan Pizza ready so let’s get to the movie. You guys remember Chevy Chase in the original Fletch movies right? We have a reboot of the Fletch character with Confess, Fletch. I will call it a reboot because this new movie is based on the second book in the original Fletch series; this new version has nothing to do with the original two movies. You may feel that no one could top Chevy Chase as the charming, irreverent Irwin M. Fletcher. But…

Hamm seems to genuinely delight in playing comedic roles and he is flawless as Fletch. While we all got to know Jon Hamm as the serious Don Draper on Mad Men, I always loved his comedy performances on SNL, Bridesmaids, 30 Rock and the Unbreakable Kimmy Schmidt, so it’s great to see him in a comedy. But perhaps my favorite part of this movie was seeing John Slattery (Roger Sterling from Mad Men) cast as Fletch’s former editor, Frank Jaffe. Roger and Don, er… Fletch and Frank only have a few minutes of screen time together, but seeing them together again was an emotional moment for me. The end of this movie tees up a sequel, which could follow the book sequel Fletch’s Fortune. I will hold my breath for it.

Chicken Parmesan Pizza, breaded fried chicken tops this pie with fresh mozzarella, red sauce, Parmesan and a roasted pepper relish.

Ingredients

  • 1 Prepared Pizza Dough
  • 6-8 oz. Fresh Mozzarella, slices sliced into quarters
  • 1/2 cup Red Sauce
  • 1.5-2 Breaded Fried Chicken Breast Cutlets
  • Grated Parmesan Cheese
  • Olive Oil
  • Roasted Poblano Pepper Relish

Instructions
