Mediterranean Pizza and The Old Man

Hello and welcome to Pizza and a Movie! This week’s pizza has Mediterranean ingredients like artichoke hearts and feta with slices of red onion and super flavorful roasted garlic chicken sausage. It’s a light and delicious pizza, full of great flavor. The roasted garlic chicken sausage is from Trader Joe’s, but you can certainly substitute it with a differently flavored chicken sausage. Or you can add your own roasted garlic as a topping to get that delicious, savory sweet roasted garlic flavor. Let’s jump right in!

Roasted Garlic Chicken Sausage

Get your oven preheating to 450 degrees F with a pizza stone or steel. Though the chicken sausages are fully cooked, I want to give them a few minutes on the stove top to get some nice browning. I sliced three chicken sausages in half lengthwise and then sliced each half into thin slices. In a pan over medium heat, with a drizzle of olive oil, I browned the roasted garlic chicken sausages for about 4 minutes. Let the chicken sausage slices cool before topping the pizza.

Other than the roasted garlic chicken sausage, we have mozzarella, quartered artichoke hearts, thinly sliced red onion and a block of feta.

Build the Mediterranean Pizza

Roll, spin or stretch your dough out to about a 12-inch round. Start with a layer of the grated mozzarella. Then top that with the roasted garlic sausage.

Next, add the artichoke hearts. Then, the red onion slices.

Top it off with crumbled feta and we are ready for the oven!

Bake the pizza for 10-15 minutes, until the crust is puffy and golden and the cheese is melted and begins to brown around the edges.

Finishing Touches

To give this Mediterranean Pizza a little color, when it comes out of the oven, sprinkle the top with fresh chopped parsley.

Movie Night: The Old Man

This week I have a TV Show instead of a movie. The Old Man stars Jeff Bridges as an ex CIA agent with long, dark and complicated past. There is one more episode left, so you have a little time to catch up before the finale. I really don’t want to give any plot points away here because the story unfolds in wonderfully mysterious ways. I will say that Jeff Bridges gives an amazing performance and I am left on the edge of my seat after each episode.

The Old Man also stars John Lithgow, Amy Brenneman and Alia Shawkat. It is an FX show and you can watch it on Hulu and YouTube TV (with a subscription). You can buy individual episodes on Apple TV, Google Play and Amazon Prime.

With artichoke hearts and feta, slices of red onion and flavorful roasted garlic chicken sausage. It's a light and delicious pizza!

Ingredients

  • 3 Roasted Garlic Chicken Sausages (or other chicken sausage), sliced in half lengthwise and then cut into slices
  • Drizzle of Olive Oil
  • 1 Prepared Pizza Dough
  • 1 cup Grated Mozzarella Cheese
  • 1 can Artichoke Hearts, drained and quartered
  • 1/4 Red Onion, sliced thinly
  • 1/4 cup Crumbled Feta Cheese
  • Chopped Parsley, for garnish

Instructions

Sauté the chicken sausage slices with a drizzle of olive oil over medium heat until the sausage develops some browning, about 4 minutes. Stir the sausage slices occasionally for even browning. Let the sausage cool before topping pizza.

    I’m so glad you picked “The Old Man” for this week. I’ve read about it, and since it wasn’t on at the time, I promptly forgot about it. I really enjoy Jeff Bridges’ work, and my kids and I have been fans since “Tron”. It wasn’t the world’s best movie by a long shot, but it was quirky and fun, and my oldest son was computer mad at the time. (He still is.). As for the Mediterranean Pizza, yes please. It sounds absolutely delicious. Thanks for the recipe and for reminding me of a show I don’t want to miss. I am really looking forward to it. This week’s Stump The Chef is pretty straight forward, and you can probably answer it in five minutes or less. Hollywood is forever proving how unoriginal they are by constantly remaking movies, and not for the better. Name the worst three redos of all time, and name the pizza that you would force the producer and director to eat, until they have repented and promised never to do anything unoriginal ever again. When I was living in Minnesota I heard all about a dreadful food called lutefisk. Most people swore it was the world’s worst food. Some people ate it at Christmas although that was mainly a tradition among older people. The best thing I ever heard about it was that they got send to it although I never heard anyone claim to like it. If I had to make up a dreadful pizza, it would be lutefisk, Limburger, sauerkraut, raw garlic and deep fried dill pickles, with a light dusting of Pop Rocks. Okay, so even though there are a ton of really dreadful remakes, you only have to come up with three, and three really dreadful pizzas. The more dreadful and silly, the better.       Hi Mari! First of all, LOL! The worst remakes of all time… Man, there are so many… First up, the one that sticks out to me the most is Ghostbusters. It was a terrible idea and it never should have made it beyond the pitch. Disappointing too because I actually love some of Paul Feig’s other work, namely Bridesmaids and Freaks and Geeks. I think Ghostbusters was an attempt to recreate the comedy magic of Bridesmaids and it fell so flat, we actually left the theater midway through. So while I could think of a terrible pie to serve Mr. Feig, I might just serve him up a Hawaiian Pizza. Because while I love a Hawaiian Pizza, most people like to talk trash about it, making it the butt of all pizza jokes.
      Next would be the 1998 version of Psycho, because why? Again, I like Gus Van Sant, so maybe he gets a pointless pizza like a spaghetti and marinara-topped pizza. I don’t understand why that’s a thing, same with Psycho 2.0.
      Number three has to be the 2010 remake of The Karate Kid. I didn’t even see this movie but just the awareness of its existence is enough to add it to this list. It’s just so dumb to remake a classic movie to be more relevant for today’s generation. I wonder if today’s young people feel offended that Hollywood thinks they can’t enjoy an old movie. Anyway, Jackie Chan is no Mr. Miyagi. In fact this reboot takes place in China and they’re doing kung fu, not karate. So…why? This pizza would have to be Taco Bell’s Mexican Pizza. I actually love The Mexican Pizza at Taco Bell (glad they brought it back for the die hard fans), but it’s not a pizza. Just like The Karate Kid 2010 is not the Karate Kid, it’s The Kung Fu Kid.

        Those were all great contenders and I am with you on all of them. I knew Ghostbusters would turn up on this list because it’s the one that really annoys me the most. My kids and I loved Jackie Chan movies but they wouldn’t watch the Karate Kid slash Kung Fu Kid reboot when it dropped. Maybe I should say when it fell like a lead elephant. I used to make a Mexican pizza for the kids all the time. That one has taken a lot of slams lately, and I don’t know why. People liked it and still do. One thing that I always got a kick out of was that in a Jackie Chan movie his character was always named Jackie. Maybe because he couldn’t remember his character’s name, so they had to call him that, and even when he could remember, they just kept it? Thanks for playing and the suggestions for pizza.     I am loving The Old Man….my only question is, is it me or does Jeff Bridges talk like he has a mouth full of marbles? He never used to talk like this so it is perplexing!!! Love the pizza recipe and will be trying it soon!!

      Hi Christine, I noticed that in the first episode; it’s as if he is chewing on his words… I did see him do an interview on CBS Sunday Morning and his speech did seem a little different then too, but not quite as exaggerated as we see in the show. Perhaps his Cancer and Covid battles affected his speech or voice? Regardless, I am thankful he recovered both illnesses and is well enough to grace our screens.
